The BEST Twice Baked Potatoes

These Twice Baked Crack Potatoes are hands-down the BEST twice baked potatoes I’ve ever eaten! Twice-baked potatoes loaded with cheddar, bacon, and ranch. OMG! They are so good that we ate them two days in a row. We just couldn’t get enough of them! I could make a meal out of just these yummy potatoes. They are easy enough for a weeknight and fancy enough for a dinner party.

How to Make Easy Twice Baked Crack Potatoes

These Twice Baked Crack Potatoes are very simple to make. Start by baking the potatoes until tender. Once the potatoes are cool enough to handle, slice them in half. Scoop out the pulp and leave a thin shell inside the skins. Mix together the potato pulp, ranch dressing mix, cheddar cheese, bacon, butter, half-and-half, and sour cream. Stuff the potato mixture into the potato shells and bake.

Feel free to use turkey bacon, milk, and low-fat sour cream if you are looking to reduce the calories. I like to garnish the top of the potatoes with a little extra cheese, bacon, and dried parsley. I think it makes the potatoes look extra yummy. You can skip that extra step if you wish.

Can Twice Baked Crack Potatoes be Made in Advance?

Sure! You can prepare the twice-baked potatoes the night before and refrigerate until ready to bake. You can also bake the potatoes a day in advance and assemble the twice-baked potatoes the next day. Either way is fine.

Can You Freeze Twice Baked Crack Potatoes?

Absolutely! I prefer to freeze the potatoes unbaked. When ready to bake, thaw completely and bake as directed below. If you don’t have time to thaw the potatoes, I suggest starting the potatoes in the oven covered in foil for about 15 minutes and then removing the foil and baking as directed below

Twice Baked Crack Potatoes – the BEST potatoes EVER!! Loaded with cheddar, bacon, and ranch. Can make in advance and freeze for later. Ingredients:

Instructions:

  • Preheat oven to 400ºF. Bake potatoes for 1 hour, or until tender. Reduce oven temperature to 375ºF.
  • When cool enough to handle, cut potatoes in half lengthwise. Scoop out the pulp, leaving a thin shell. Set skins aside.
  • In a large bowl, mash potato pulp. Stir in half-and-half, sour cream, ranch dressing mix, cheddar cheese, and bacon. Stuff mixture into potato skins.
  • Place potatoes on a baking sheet. Drizzle melted butter over potatoes. Sprinkle with dried parsley, if desired.
  • Bake at 375ºF for 20 minutes, until heated through.

Notes:

Can use turkey bacon, low-fat sour cream or plain greek yogurt, and milk if you want to reduce the calories.
Do not make the Ranch dressing – use the dry mix only.
Feel free to increase/reduce the amount of Ranch dressing mix to your preference.
Can make in advance and refrigerate or freeze for later.
If baking from frozen, thaw completely and bake as directed above.
If baking after refrigerating, you may need to add 5 or 10 minutes to the cooking time.
