Easy Warm Mexican Corn Dip

TGIF! Anyone else excited for all the big football games this weekend? This Warm Corn Dip is a MUST for all your football parties this weekend. OMG! It is super easy to make and tastes great! We both could not stop eating this dip. Corn, cream cheese, diced tomatoes and green chiles, and seasonings. Who knew a few simple ingredients could make such an amazing dip! This is perfect for any party. I promise it will be a hit!

How to Make Spicy Corn Dip on the Stove

This Warm Corn Dip is super easy to make. Just throw everything in a non-stick skillet and cook on low until it is melted. It literally takes less than 10 minutes. You could even put all the ingredients in a microwave-safe dish and microwave it on HIGH for 2 or 3 minutes. Quick, easy, AND crazy delicious. You can’t beat that!!

The recipe uses a can of diced tomatoes and green chiles. I used a can of regular Rotel tomatoes. If you are sensitive to heat, make sure to grab a can of mild Rotel tomatoes.

If you are making this for a party and want to keep it warm, feel free to transfer the dip to the slow cooker. Alternately, you can make the dip in the slow cooker from start to finish. It will take longer to get warm in the slow cooker, but just plan accordingly. If the dip gets too thick in the crockpot, just add a little milk to thin it back out.

Warm Corn Dip is Great with Fritos!

We absolutely LOVED this easy Mexican Corn Dip. I am planning on making it again this weekend because I can’t stop thinking about it. We like to eat this dip with Fritos. It is also great with Tostitos Scoops! Both chips are gluten-free, as is the dip. All you need are some sausage balls and some party sandwiches and you are set for all the big games!   • Combine all ingredients in a non-stick skillet and cook over medium heat until heated through and cheese is melted.
  • Serve warm with chips.

Notes:

Can keep dip warm in slow cooker. If dip starts to get too thick, add milk to thin it out.
Can cook the dip in the microwave – place all ingredients in a microwave-safe bowl and cook for 2 to 3 minutes.

    1. I didn’t add shredded cheese. I haven’t made it in the crockpot, so I can’t give exact times. I would cook it for an hour and then stir it to see how much longer it needs for the cream cheese to melt. You could also just make it on the stove as written and keep it warm in the crockpot.
