These Crack Keto Biscuits are AH-MAZ-ING! Even if you aren’t doing the Keto diet, you are going to LOVE this bread. Low-carb bread loaded with cheddar, bacon, and ranch – so good! I made these to go with a steak dinner last weekend and we gobbled them up! We had a couple of leftover biscuits. I warmed them up and ate them with some scrambled eggs for breakfast. Perfect!
How to Make Keto Biscuits with Almond Flour
These Crack Keto Biscuits are super easy to make. Start with melting some cream cheese and mozzarella cheese. I just popped it in the microwave for about a minute. Next stir in some baking powder, eggs, almond flour, ranch dressing mix, cheddar cheese, and bacon. Form the dough into balls and let rest 10 minutes before baking. So easy!
I used a 10-inch skillet and a large cookie scoop and got 11 biscuits. If you don’t want individual biscuits, I think you could just put the dough in the skillet or baking pan and make a loaf of bread. I like to brush the cooked biscuits with some melted butter and dried parsley.
The key to making these Crack Keto Biscuits is using superfine almond flour. Almond flour is pretty common in stores. I bought mine at Publix and Walmart. I used King Arthur Flour brand. I also like Bob’s Red Mill Almond Flour.
Can Crack Keto Biscuits Be Frozen?
I have not frozen these Crack Keto Biscuits, but I am sure they would be just fine frozen after you have baked them. To reheat after freezing, thaw and either reheat in the microwave or wrap in foil and reheat in the oven.

These look amazing! Do you happen to have the macros for these? I will definitely make these but my son is on a super strict keto with only 10 net carbs allowed per day so I’d like to know if he can have a piece of one of these or if I should plan on something different for him.
Here are two websites that you can use to estimate the nutritional information:

How should I store them? Room temp or fridge?
They were fantastic!
These were wonderful! The only problem I had was restraining myself from eating all of them!😂
I love this recipe. But I use cashew flour instead of almond flour. It makes them sooooooo much better.
I would think cashew flour significantly increases the net carbs. Cashew flour is roughly 20 net carbs per cup vs 10 for almond flour. My buddy makes a version of these often. I’m going to try a batch today to go with my keto veggie beef soup. ~~~~~Chef Jeff
what if I don’t have a microwave, can I use my stove top?
that will probably work just fine.
I made these to go with our Christmas meal this evening. They did NOT disappoint! They were extremely flavorful! I doubled the recipe and followed several suggestions made by others; using half the amount of Ranch dressing mix. I, also did not have an iron skillet (cooking at my daughter’s place) so I used her mini muffin tin, suggested by another commenter. I got 52 mini crack biscuits/muffins using a medium sized cookie scoop. I also baked them for 15 minutes at 400°F and checked them for doneness. They were perfect! I will baking these again!
