Cheesy Rice Casserole Side Dish

This Spinach & Artichoke Rice Casserole has quickly become a favorite in our house. I could make a meal out of this yummy side dish. Rice, spinach, artichokes and four different types of cheeses – ricotta, cream cheese, mozzarella, and parmesan cheese. YUM! It is a great way to sneak in some vegetables for those picky eaters. This is super easy to make and goes with just about everything. It is great for potlucks, dinner parties, and holiday meals. It is a delicious alternative to your usual broccoli and rice casserole.

How to Make Spinach & Artichoke Rice Casserole

This casserole is very simple to make. Start with some cooked rice. I used cooked white rice. You can use any type of rice that you prefer – white, jasmine, or brown. As long as it is already cooked, it is fine. Next, add the spinach, artichokes, cheeses, milk, and seasonings. Spread into a 9×13-inch baking dish and bake.

  • I chopped my artichokes in the food processor so they chopped pretty fine. Feel free to use larger chunks of artichokes if you prefer. If you love spinach, you can double the spinach in this recipe. I think a little spinach goes a long way, so I never add more. 
  • If you want to transform this side dish into a main dish, add some cooked chicken or ham. YUM!
  • Can Spinach & Artichoke Rice Casserole Be Frozen? You can definitely make this casserole in advance and freeze it. Sometimes I will split the casserole between two pans and bake one now and freeze one for later.
  • You can freeze it baked or unbaked. I usually freeze casseroles like this unbaked. To bake this casserole after freezing, thaw completely and bake as directed below. To reheat this casserole after freezing, thaw completely and reheat in the microwave or covered in the oven.

Instructions:

  • Preheat oven to 325ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
  • In a large bowl, beat together cream cheese, ricotta, milk, garlic powder, and onion powder.
  • Add cooked rice, spinach, artichoke hearts, 1-½ cups shredded mozzarella cheese, and 1 cup shredded parmesan cheese. Mix well.
  • Spoon rice mixture into baking dish. Top with remaining mozzarella and parmesan cheese.
  • Bake uncovered for 40 to 45 minutes.

Notes:

Can freeze casserole for later. To bake casserole after freezing, thaw completely and bake as directed above. If freezing already baked casserole, thaw and reheat in the microwave or covered in the oven.
Can use cooked white rice, jasmine rice, or brown rice.
Can substitute cauliflower rice for cooked rice to make this casserole low-carb/keto-friendly.

    1. I do not like ricotta either, I’m thinking of using cottage cheese instead. I have done that in the past with other recipes and it worked well.

      I didn’t have cream cheese (next time).
      I added sun dried tomatoes and I added sauted onion with tempeh. I also used almond milk. Was really delish, husband loved it!
