Best Corn Casserole 

I love a good corn casserole. Especially a good corn casserole with CHEESE! This Cheesy Corn Casserole is the BEST! I could make a meal out of just this yummy corn casserole. SO good! We love this any time of the year, but it is a MUST during the holidays. I freeze summer corn just so we can make this recipe for Thanksgiving and Christmas dinner.

How to Make Cheesy Corn Casserole

This casserole is very simple to make. Whisk together some eggs, evaporated milk, salt, and pepper. Stir in some corn kernels, chives, and swiss cheese. Transfer the mixture to a baking dish and top with more swiss cheese and some crushed Ritz crackers. Pop it in the oven and that is it!

  • I used frozen Silver Queen corn kernels. It is my favorite type of corn. If you can’t find Silver Queen corn, any frozen corn will work just fine. I used swiss cheese in this casserole, but feel free to use any cheese you like. 
  • Can Corn Casserole Be Made in Advance and Frozen? Yes! This casserole can be made in advance and refrigerated or frozen for later.
  • To bake after refrigerating overnight you will need to add a few minutes to the cooking time since the casserole will be cold.
  • You can freeze this casserole baked or unbaked. To bake after freezing unbaked, thaw completely, and bake as directed below.
  • To reheat after freezing baked casserole, thaw completely and reheat in the microwave or covered in the freezer.
  • Is corn casserole gluten-free? For a gluten-free dish, omit the Ritz crackers or use gluten-free crackers or crushed pork rinds.

Ingredients:

  • 4 large eggs
  • 1 (12-oz) can evaporated milk
  • 1 Tbsp chopped chives
  • salt and pepper to taste
  • 4 cups frozen corn kernels, thawed
  • 2 cups shredded swiss cheese
  • 1 sleeve Ritz crackers, crushed
  • ¼ cup butter, melted

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
  • Whisk together eggs, milk, chives, salt, and pepper. Stir in corn and 1-½ cups cheese. Transfer to prepared baking dish.
  • Combine crushed crackers and melted butter. Sprinkle over casserole. Top casserole with remaining ½ cup of swiss cheese.
  • Bake uncovered for 35 to 45 minutes. Let stand 10 minutes before serving.
