Easy Hawaiian Banana Nut Bread Recipe

This Hawaiian Banana Nut Bread is seriously delicious! This is not your average banana nut bread. This Hawaiian Banana Nut Bread is loaded with pineapple and coconut. YUM! This recipe was sent to me by a Plain Chicken reader. This was her mother's recipe. Her mother was famous for this bread and said it was heavenly. Well, I have to agree! This Hawaiian Banana Nut Bread is so good! It is great for breakfast, an afternoon snack, and a homemade gift. Who wouldn't love a loaf of Banana Nut Bread and some coffee as a holiday gift?

How To Make Hawaiian Banana Nut Bread With Pineapple & Coconut

As I said, this Hawaiian Banana Nut Bread is super easy to make. It doesn't even require a mixer! All you need is a bowl and a whisk. Start with combining mashed bananas, eggs, canola oil, vanilla extract, coconut extract, and crushed pineapple. Next, you will add in all of the dry ingredients - flour, sugar, baking soda, salt, cinnamon, pecans, and coconut. Pour the batter into two loaf pans. Top the batter with some turbinado sugar and bake. The sugar gives the bread a nice crunch after it is baked.

Check the bread while it is baking and tent it with foil during the last 15 minutes if it is starting to get too brown. Feel free to swap the pecans for walnuts or macadamia nuts. You can also make the bread in smaller loaf pans. The smaller loaves are perfect for gifts! Wrap them in some plastic wrap and tie a bow on them. Easy peasy!

Can Banana Nut Bread Be Frozen?

This Hawaiian Banana Nut Bread recipe makes two loaves. You can freeze one or both loaves for later. You can also freeze any extra ripened bananas! They are good for about 3 months. Simply mash enough for one recipe and stir in about 1 tsp. lemon juice and place in a freezer bag. Pull the frozen mashed bananas out and thaw when you are ready to make another batch of this yummy Hawaiian Banana Nut Bread.

ingredients:

  • 3 eggs, lightly beaten
  • 2 cups mashed bananas
  • 1-1/2 cups canola oil
  • 1 Tbsp vanilla extract
  • 2 tsp coconut extract
  • 1 (8-oz) can crushed pineapple, drained
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1-1/2 tsp cinnamon
  • 1 cup chopped pecans
  • 1 cup shredded sweetened coconut
  • 1/4 cup turbinado sugar

instructions:

  1. Preheat oven to 350ºF. Spray two 9x5-inch loaf pans with cooking spray,
  2. In a large bowl, whisk together eggs, bananas, oil, vanilla, coconut extract, and drained pineapple.
  3. Add flour, sugar, baking soda, salt, and cinnamon to the bowl. Stir well. Stir in pecans and coconut.
  4. Pour batter into prepared loaf pans. Sprinkle batter with turbinado sugar.
  5. Bake for 1 hour and 15 minutes. Cool in pans on wire racks for 10 minutes.
  6. Remove bread from pans and place on wire rack. Cool completely before cutting.

NOTES:

Check bread at 1 hour and cover with foil if starting to get too brown.
Can freeze baked loaves.
