No-Bake Pecan Pie Truffles

Now that we got Thanksgiving out of the way we can move on to Christmas! These Pecan Pie Balls are a MUST for your holiday cookie tray. These things are SOOOO good! They taste just like pecan pie. The chocolate candy coating really puts these Pecan Balls over the top!

How to Make Maple Pecan Balls

These candy balls are very easy to make. Start with chopping the pecans. Once you have the pecans chopped, mix the pecans with some graham cracker crumbs, brown sugar, maple syrup, melted butter, and vanilla. Form the pecan mixture into balls and place them in the freezer. Freezing the balls will make them easier to dip in the chocolate.

  • I put my pecans in a food processor and pulsed them a couple of times. You want the pecans in very small pieces.
  • If you want to make Bourbon Pecan Balls, swap some of the maple syrup for bourbon.
  • For the chocolate coating, I used chocolate almond bark. Feel free to swap the almond bark for melted chocolate chips or chocolate bars. Add some shortening to the chips or chocolate bars to make the chocolate mixture smoother.
  • You can also dip the balls in white almond bark or melted white chocolate.
  • If you don’t have maple syrup, you can substitute Karo Syrup.
  • Decorate the balls with any color sprinkles – Christmas, Valentine’s, birthday sprinkles, or your favorite team colors.
  • This recipe makes about 3 or 4 dozen, depending on how big you make the balls.
  • Store the candy in an air-tight container.
  • This candy can be easily frozen, stored in the refrigerator, or at room temperature if you’ll be eating them within a day or two.
  • The candy balls will last about a month in an air-tight container stored in the refrigerator.

They also make great homemade gifts for teachers, co-workers, bus drivers, and friends. Package the balls in a cute box or in some cellophane bags for an easy and delicious gift!

Pecans, graham crackers, brown sugar, maple syrup, butter, vanilla, and chocolate candy coating. Can add bourbon to the pecan mixture for a boozy treat. A MUST for your holiday cookie tray!

Ingredients:

  • cups finely chopped pecan halves
  • 1 cup graham cracker crumbs
  • 1 cup brown sugar
  • 1 tsp vanilla
  • ½ cup maple syrup
  • 4 to 6 Tbsp melted butter , if needed
  • 1 (24-oz) package chocolate almond bark

Instructions:

  • Combine chopped pecans, graham cracker crumbs, brown sugar, vanilla, and maple syrup. Stir to combine. Add melted butter only until the mixture comes together and can be easily shaped into balls. (Depending on how you chopped your ingredients, you may have some leftover butter.)
  • Shape pecan mixture into 1-inch balls.
  • Place balls on a parchment-lined baking sheet and place in the refrigerator or freezer for an hour.
  • Melt almond bark according to package directions.
  • Remove balls from refrigerator and dip into the chocolate almond bark.
  • Place dipped balls on parchment or wax paper and let sit until set.

Notes:

  • I used a box of Keebler Graham Cracker Crumbs. They are very finely ground.
  • If you make your own graham cracker crumbs, you want the crumbs to be the consistency of sand.

  1. What if I cooked the butter and brown sugar first? The thought of gritty brown sugar doesn’t appeal to me. I’m assuming I could cook till dissolved and let cool and mix the rest.

  2. The first time I made these, it seemed like way too much brown sugar so I made another batch with 1/2 the brown sugar, which I also put in a food processor first. Then I added a small amount of chopped fresh dates and vanilla and rum flavoring. Tastes a lot like pecan pie!

    1. That would just be up to you. I would start with a tablespoon or so. Add it before the maple and butter so you don’t have too much liquid in the recipe.

    1. I always cook with unsalted butter, but salted works just fine too. I don’t have a preferred brand. I usually buy butter from Costco or Sams.

  6. These were so easy to make but I made them with white chocolate on the outside… they came out way to sweet. If you do white chocolate, I’d cut down on the brown sugar, add more graham cracker and butter to hold it together. And definitely thin the white chocolate before coating.

  7. My son loves pecan pie, but he just had his teeth pulled. He has his upper dentures, only 4 front bottom teeth. Can he chew these do you think. Are they hard or crunchy? I know strange question. Thanks so much.

    1. He definitely could if you ground the pecans small enough. The hardest part of the ball is the candy coating, so I think he’ll be okay! It has a gritty texture, which may get annoying if it gets inside/under his dentures, so keep that in might too. 😁 I just made these for the second time and it’s super easy. My brother in law loves them

    1. It is melting chocolate that is made just for things like this. It melts more smoothly than chips. You can find it in the baking aisle. Not sure why it is called Almond Bark though.

    2. Mariola, Almond Bark is a candy coating that you melt and use to coat almost anytype of confection. When melted it is very much like melted chocolate chips, but it handles much easier. I have used it for years to make cakeballs. I buy the Walmart brand since it is the cheapest and melts really well.

  8. What about doubling the recipe, and using 1 pkg of chocolate almond bark and 1 pkg of white almond bark to make a milder chocolate (milk chocolate)?

  9. Have you tried toasting the pecans prior to incorporating in the balls? Just wondering if that would enhance the flavor.

    1. I haven’t tried that, but it would probably work fine. Add it a little at a time until the mixture comes together. You may need a little less or a little more.

  10. Wonder how these would taste rolled in powdered sugar instead of covered in chocolate? I already have so many cookies that have chocolate on them.

  11. Can you freeze these and if so, how good will they keep for? They will make nice neighbor and secret Santa gifts!

    1. Sure! I would freeze the balls undipped and dip them when you are ready to give them away. You can dip them in the chocolate candy coating frozen.
