How to Make Air Fryer Chicken Wings with Baking Powder

The key to getting the wings nice and crispy in the air fryer is coating the skin with baking powder before cooking. I had read about this technique online in the past and finally tested it out. Let me tell you, it works! I'm not sure about all of the science behind it, but letting the baking powder soak into the chicken skin makes it crispy when it bakes in the air fryer.

To make these Air Fryer Buffalo Chicken Wings start with rubbing the chicken wings with some garlic powder and baking powder. Let the chicken hang out in the refrigerator for at least one hour or up to overnight. When ready to bake the wings, season them with salt and pepper. Place them in the air fryer basket standing them up on their ends next to the edge of the basket wall. Make sure not to overcrowd the basket. Bake the wings and then toss in wing sauce. I used a bottle of Frank's Wings Sauce.

If you aren't a fan of buffalo sauce, feel free to toss the wings in your favorite sauce. BBQ sauce or this sauce from our Sweet & Spicy Boneless Wings would also be delicious!

  1. Again - your recipes look amazing! Can't wait to try these out! We've done them twice in the air fryer - once not coated (they were good, not great), and once coated with seasoned flour (too heavy). I think the corn starch and garlic powder will be the perfect balance!

  2. Wondering if this would work with chicken tenders? No skin to absorb the baking powder and garlic powder?

    1. I haven't tried this with chicken tenders, so I am not sure how it would work. Let us know how it turns out if you try it.
