Easy Appetizer made with Refrigerated Biscuits

Next week is the Super Bowl. I am super excited about the game. Well, I’m excited about the commercials and the food. I am still finalizing our menu, but I know these YUMMY Taco Ranch Biscuit Bites will on the table. OMG! SO good! Taco meat, ranch dressing, and cheese baked in mini biscuit cups. Get in my belly! They make a great appetizer but they are equally delicious for lunch or dinner. Serve the stuffed biscuits with some Mexican rice and beans and you are ready for a fiesta!

How to Make Taco Ranch Biscuit Bites

These Taco Ranch Biscuit Bites are very easy to make. Start with splitting the biscuits. You are going to split each biscuit into two rounds. Place each biscuit round into a mini muffin pan. Next, make the taco meat. Let the taco meat cool and then add some ranch dressing and cheese. Spoon the taco meat mixture into the biscuit cups and bake.

  • This recipe is made for the smaller can of biscuits – NOT the bigger Grands biscuits. I used two cans of Pillsbury Flaky Layers Biscuits Buttermilk. It is a 12-oz can of biscuits with 10 biscuits in each can. You can also find 6-oz cans with 5 biscuits per can.
    • Make sure you have a total of 20 biscuits. You are going to separate each biscuit into two rounds making a total of 40 biscuits.
  • You can make the taco meat ahead of time and refrigerate until ready to bake the biscuits.
  • Feel free to substitute ground turkey for the ground beef.

Ingredients:

Instructions:

  • Preheat oven to 375ºF. Lightly spray mini muffin pans with cooking spray, set aside.
  • Cook ground beef in a large skillet over medium-high heat until no longer pink. Drain fat. Add taco seasoning, diced tomatoes and green chiles, and water. Simmer for 5 minutes. Cool slightly.
  • Stir together taco meat mixture, ranch dressing, and shredded cheddar cheese.
  • Remove biscuits from cans and split each biscuit into two rounds. Place each biscuit round into muffin tin. Scoop taco meat mixture into biscuit cups.
  • Bake for 12 to 15 minutes, until biscuits are golden brown.

  1. I finally got around to making these; sorry I waited a couple months. Wow!!! They’re fantastic! I couldn’t find the smaller biscuits so just used regular muffin tin. They were a great accompaniment to homemade tomato soup. Make these addictive biscuits. You won’t regret it.
