How to Make Three Cheese Chicken Spinach & Artichoke Alfredo Pasta

This pasta casserole is super easy to make. Start with boiling the pasta. Next, mix together Alfredo sauce, ricotta cheese, sour cream, garlic, parmesan cheese, frozen spinach, chopped artichokes, eggs, and chopped chicken. Toss in the cooked pasta. Spread the pasta mixture in a large baking dish. Top the casserole with mozzarella cheese and bake.

  • I used a rotisserie chicken for the cooked chicken in this casserole. It tastes great and is a HUGE timesaver!
  • Make sure to get all of the water out of the frozen spinach. I squeeze the thawed spinach into some paper towels to get out as much liquid as possible.
  • This pasta casserole would also be delicious with some mushrooms in the mix. YUM!

Three Cheese Chicken Spinach & Artichoke Alfredo Pasta – think cheesy chicken Alfredo pasta meets spinach & artichoke dip. Two of my all-time favorites in one pan. Super easy to make. Can freeze for a quick meal later!! Penne pasta, Alfredo sauce, ricotta cheese, sour cream, garlic, parmesan cheese, frozen spinach, chopped artichokes, eggs, and chopped chicken. Ingredients:

  • 1 (16-oz) package penne pasta
  • 2 (15-oz) jars Alfredo sauce
  • 1 (8-oz) container sour cream
  • 1 (15-oz) container ricotta cheese
  • 1 tsp minced garlic
  • 3 cups chopped cooked chicken
  • 2 large eggs, lightly beaten
  • ½ cup grated Parmesan cheese
  • 1 (10 to 12-oz) package frozen chopped spinach, thawed and drained
  • 1 (14-oz) can artichoke hearts, drained and chopped
  • 2 cups mozzarella cheese

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Cook pasta according to package directions; drain and return to pot.
  • Stir together all ingredients except mozzarella cheese. Spread mixture into prepared baking dish. Sprinkle casserole evenly with mozzarella cheese.
  • Bake uncovered for 30 minutes or until bubbly.

    1. I love Rao's Alfredo Sauce, but it is a little expensive. I also really like Trader Joe's Alfredo Sauce and I have used Bertolli with success.
