Roly Poly is one of my favorite lunch spots. I just love their wraps. My favorites are #28, #52 & #72. I’ve already tried my hand at recreating #52 Hickory Chicken and it was better than the original! This time I am recreating #28 Santa Fe Chicken. Roly Poly’s menu describes it as Sliced Chicken Breast, Melted Jalapeno Jack Cheese, Onion, Tomato, Ranch Dressing, Grilled Golden Brown with a Side of Salsa. I describe this sandwich as delicious! We eat this at least once a week! It is great for a quick lunch or dinner. I usually leave off the tomatoes and onions on my wrap. Chicken Legs eats his all the way!
How to Make #28 Santa Fe Chicken
These sandwich wraps are super easy to make. Start with placing a slice of pepper jack cheese on a tortilla. Top it with sliced chicken, thinly sliced onion, tomatoes, and ranch dressing. Fold the edges of the tortilla to the middle and place on a panini press. Cook until golden brown. Serve with a side of salsa for dipping.

- If you don’t have a sandwich press, you can cook the wraps in a non-stick skillet like a grilled cheese sandwich. Use a griddle press to press the sandwich down in the skillet.

- Feel free to use any cooked chicken in the wraps.

#28 Santa Fe Chicken (Roly Poly)
Ingredients:
- 1 (22-oz) bag frozen Tyson grilled chicken strips, thawed
- 7 soft taco tortillas
- 7 slices pepper jack cheese
- 1 small onion, thinly sliced
- ¼ cup ranch dressing
- 2 plum or roma tomatoes, sliced
- ¾ cup salsa
Instructions:

- Add a few pieces of thinly sliced onion, 2 slices of tomatoes, and 1 to 2 teaspoons of ranch dressing.
