It’s not officially summer, but our grilling game is going strong! This 3-Ingredient Taco Chicken has been on repeat in our house. You can ‘t beat an easy grilled chicken recipe that has only three ingredients – including the chicken! I like to marinate the chicken before bed and we are ready to grill the next day. SO easy!!!
How to Grill Chicken
As I said, I marinated the chicken overnight. I think the longer the better when it comes to marinating. If you don’t have that much time, try to give it at least an hour in the marinade.
Don’t forget to pound your chicken to an even thickness! That is the key to getting perfectly grilled chicken. Place the chicken in a ziplock bag and gently pound the thick end of the chicken with a flat meat mallet. Having the chicken the same thickness helps the chicken cook evenly.
Don’t have a grill? No problem! You can cook the chicken inside. Pan sear the chicken on both sides for 3 to 4 minutes. Place chicken on a rimmed baking sheet. Bake at 400ºF for 10 minutes, until the chicken reaches an internal temperature of 165ºF.
What to Serve with Grilled Taco Chicken
We ate this 3-Ingredient Taco Chicken with some Quick Mexican Rice and Easy Refried Beans. This is also great as fajitas, tacos, on top of a salad, in a wrap. I’ve also used it as the marinade for my all-time favorite Pollo Loco recipe! This is really a versatile recipe. That is why we love it so much!!

3-Ingredient Taco Chicken
Ingredients:
- 1½ cups Italian dressing
- 1 (1-oz) packet taco seasoning
- 4 boneless skinless chicken breasts
Instructions:
- Place chicken in a gallon ziplock bag. Using a flat meat mallet, pound chicken to an even thickness.
- Whisk together Italian dressing and taco seasoning. Pour over chicken and refrigerate at least one hour to overnight.
- Remove chicken from marinade.
- Prepare grill and grill chicken until done, approximately 12 to 15 minutes.

If I use chicken tenders in an electric skillet would I need to use the oven as well? Seems like they would cook quick because of their size.
You can just use the skillet for tenders if you prefer.
