Roly Poly is one of our favorite lunch spots. All the sandwiches are SO good. One of our all-time favorites is #36 Chicken Fajita. Sliced chicken breast, melted cheddar cheese, plum tomatoes, onions, bell peppers, and fajita sauce grilled golden brown and served with a side of ranch dressing! We both love this wrap! SO good!
I’ve always wanted to recreate this wrap at home, but I didn’t know how to make the fajita sauce. Well, thanks to my friend, Food Hussy, I now have the secret to the sauce! Woohoo!! Want to know the secret? Ranch dressing and chili powder. SO simple! I wish I had this secret sooner. We’ve been making this wrap for lunch every week since I got the secret ingredient. I am obsessed!
How to Make Roly Poly’s #36 Chicken Fajita
These sandwich wraps are super easy to make. Start with placing a slice of cheddar cheese on a tortilla. Top it with sliced chicken, thinly sliced onion, bell peppers, tomato slices, and fajita sauce. Fold the edges of the tortilla to the middle and place on a panini press. Cook until golden brown. Serve with a side of salsa for dipping.

- If you don’t have a sandwich press, you can cook the wraps in a non-stick skillet like a grilled cheese sandwich. Use a griddle press to press the sandwich down in the skillet.

- Feel free to use any cooked chicken in the wraps.

#36 Chicken Fajita (Roly Poly)
Ingredients:
- 1 (22-oz) bag frozen Tyson grilled chicken strips, thawed
- 7 soft taco tortillas
- 7 slices cheddar cheese
- 1 small onion, thinly sliced
- 1 small bell pepper, thinly sliced
- 2 plum tomatoes, sliced
- ¼ cup ranch dressing
- ½ tsp chili powder
- ¾ cup salsa
Instructions:
- To make the fajita sauce, combine ranch dressing and chili powder. Feel free to add more or less chili powder to get the color and flavor that you prefer.
- Place a slice of cheddar cheese on a tortilla. Top it with 3-oz sliced chicken.
- Add a few pieces of thinly sliced onion, some thinly sliced bell pepper, tomato slices, and 1 to 2 teaspoons of the fajita sauce..
- Fold the edges of the tortilla to the middle and place on a panini press. Cook until golden brown.
- Serve with a side of salsa for dipping.

I live in Oregon, so there are no Roly Poly places here. But that didn’t stop me from looking at their menu online. All the sandwiches look divine! No wonder your family likes the joint. I’ll have to give your recipe a try. And my 11 yr old son enjoys reading Meow Monday with me because his cat is a medium hair orange kitty named Fluffy.
Just wondering…you don’t mention the plum tomatoes in your recipe…do you leave them out? And are the peppers and onions just put in their raw? Or are they sauteed a little bit. We don’t have a Roly Poly by us…is it more of a cold sandwich shop?
I corrected the recipe to add the tomatoes. I accidentally left them out. I use the onions and peppers raw, but you can saute them if you prefer.
