I’ve seen this recipe on the web for years.  I finally decided that I had to make it when the Pioneer Woman posted it on her blog.  She raved about it, and I already know that everything she makes is amazingly yummy.  This cake was no exception – it was fantastic!  We both loved it.  It is even better with a scoop of vanilla ice cream on top!  The perfect dessert for a nice spring or summer day.

7Up Pound Cake

prep time: 10 MINScook time: 1 hourtotal time: 1 hours and 10 mins

ingredients:

  • 3 sticks Butter
  • 3 cups Sugar
  • 5 whole Eggs
  • 1 teaspoon Butter Flavoring
  • 2 tsp lemon flavoring
  • 3 cups All-purpose Flour
  • 1 cup 7-UP

instructions:

  1. Preheat oven to 325ºF.
  2. Cream butter. Add sugar, 1 cup at a time, mixing after each addition. Add eggs, 1 at a time, mixing after each addition. Add butter and lemon extracts and mix well. 
  3. Add flour, 1 cup at a time, mixing well after each addition. Add soft drink, then mix together until combined. Scrape sides of bowl, then mix briefly.
  4. Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is no longer jiggly. Remove cake from oven and invert pan until cake drops out.

  1. I was wondering if you meant self rising flour because there wasn't any mention of salt, baking power and soda? I really want to make this but I don't want to mess it up.. thanks!

  2. I want to make this soon, but I noticed that there is no leavening mentioned in the recipe.,ie. baking powder, soda, or salt. Is that correct as printed? Thanks.

  4. Did you let it cool in the pan for any amount of time? I tried to make this right after she posted it, when I inverted it I heard a big "CLUNK" and half of the cake fell out and the rest was on the bottom. 🙁 I made sure my bundt pan was very well greased. It looked like a cake exploded on the cake pan. I was so upset. My husband just laughed and said the part that fell out tasted pretty darn good. I've been afraid to try and make it again. Any tips?

    1. I usually look et my cakes cool for 10-15 minutes. The extra time is because I usually forget to start timer! Don't quit on s good thing especially if your husband said it was good!
