Ham & Cheese Hash Brown Breakfast Casserole

This Mississippi Sin Hash Brown Breakfast Casserole has quickly become a favorite at our house. All the flavors of our favorite dip in an easy breakfast casserole. So simple to make, yet SO delicious! While this is called a breakfast casserole, we love to eat this any time of the day – breakfast, brunch, lunch, or dinner. This is also great for overnight guests and holiday mornings. Whip up some biscuits and grits and you are set!

How to Make Mississippi Sin Hash Brown Breakfast Casserole

This casserole is super easy to make.  Start with cooking the hash browns in a skillet in some oil and cook them until they start to brown. Place the hash browns in a baking dish. Top with diced and cheddar cheese. Whisk together eggs, milk, sour cream, Worcestershire sauce, hot sauce, garlic powder, onion powder, salt, and pepper. Pour over the hash browns and bake. Garnish the baked casserole with chopped green onions.

  • Thaw the frozen hash browns before browning them in the skillet.
  • I used Frank’s Hot Sauce for the hot sauce in the recipe.
  • Is Mississippi Sin Hash Brown Breakfast Casserole spicy? No. There isn’t enough hot sauce to make the dish spicy. If you want a spicier dish, add more hot sauce.
  • Can Hash Brown Breakfast Casserole be made in advance? Yes! You can assemble the casserole ahead of time and refrigerate it overnight before baking. If you are baking this right after taking it out of the refrigerator, you may need to add a few minutes to the cooking time.

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Heat oil in a large skillet. Add hash browns to skillet and cook until lightly brown. Place hash browns in the prepared baking dish. Top with chopped ham and cheese.
  • Whisk together eggs, milk, sour cream, Worcestershire sauce, hot sauce, onion powder, and garlic powder. Pour over the hash brown mixture.
  • Bake, uncovered, for 60 to 70 minutes.

  1. Could you think we could use the shredded hash browns (we purchased them at Costco) that are dried and you add water to the carton and drain?

    1. I used the reconstituted hash browns you are referring to & my casserole came out great! I followed the directions on the hash brown carton to reconstitute them. I then browned them as suggested by the recipe & followed the remaining instructions as written. Hope this helps! This was a hit at my house!!
