Air Fryer Chicken & Black Bean Taquitos – SO simple and they are seriously delicious! The whole family loved them! Shredded chicken, salsa, black beans, and cheese rolled up in corn tortillas and baked in the air fryer. Can use flour tortillas if preferred. Can freeze taquitos for a quick meal later! Homemade Chicken Taquitos in the Air Fryer
The air fryer is one of my favorite small appliances in my kitchen. It is right up there with my slow cooker on MUST haves! It is amazing. We use it all the time. We make pizza, chicken fingers, and frozen snacks. They are all better cooked in the air fryer. This past week we made these delicious Air Fryer Chicken & Black Bean Taquitos for lunch. OMG! YUM! These chicken taquitos were super easy to make and they tasted great. We are making them again this weekend for all the football games!
How to Make Mexican Chicken & Black Bean Taquitos in the Air Fryer
As I said, these Mexican Air Fryer Chicken & Black Bean Taquitos are super easy to make. I like to start with a rotisserie chicken. Rotisserie chicken is my secret weapon for easy meals! I always have some pulled rotisserie chicken in the freezer.
The filling for these taquitos is a mixture of shredded chicken, black beans, salsa, and cheese. I used cheddar cheese, but pepper jack or Monterey Jack would be great too!
Place the chicken mixture on top of a corn tortilla and roll up. Place the tortillas seam side down in the air fryer and spray with cooking spray. Cook for 6 or 8 minutes and let the fiesta begin!
I used corn tortillas. If you don’t like corn tortillas, you can use flour tortillas. I tested this recipe with flour fajita tortillas and the cooking time is the same. The taquitos tasted great in the flour tortillas, so use either type or some of both!
Can You Freeze Chicken & Black Bean Taquitos?
YES! You can absolutely freeze these Chicken & Black Bean Taquitos. You can freeze them baked or unbaked. If freezing them unbaked, thaw completely and bake as directed below. If you are freezing the leftovers, thaw and either pop in the microwave or put them in the air fryer frozen and bake at 350ºF for about 8 to 10 minutes. Just watch them and make sure they aren’t burning.
What to Eat With Chicken Taquitos
These taquitos were a huge hit at our house. We both absolutely LOVED them! Top the taquitos with your favorite taco toppings. We like sour cream, lettuce, tomatoes, and extra salsa. Air Fryer Chicken & Black Bean Taquitos
Equipment:
Ingredients:
- 3 cups chopped cooked chicken
- 1 cup salsa
- 1 (15-oz) can black beans, drained and rinsed
- 2 cups shredded cheddar cheese
- 24 corn tortillas
- cooking spray
Instructions:
- Combine chopped chicken, salsa, and black beans.
- Divide chicken mixture between corn tortillas. Top with shredded cheese.
- Roll up tortillas. Working in batches, place taquitos in air fryer basket seam side down. Spray liberally with cooking spray.
- Set air fryer to 400ºF and bake taquitos for 6 to 7 minutes.
- Repeat with remaining taquitos until they are all baked.

Love all of your recipes, and incidentally, I decided to try reheating some frozen chicken enchiladas, made from your recipe, in my air fryer. They seemed to be a little wetyer than what I wanted when I first made them (my fault, not yours). I nestled them inside a little boat that I made out of non-stick tin foil. Just enough to come up the sides and the ends. Popped them inside my 6 quart air fryer. Unbelievable! They crisped up better than I could ever have imagined. Threw them back in with some cheese on top for a minute and oh they were good.
Didn’t have chicken, so I used pulled pork. Yummo!

Very tasty! Used flour shells secured with a toothpick. Topped with some guacamole and jalapeño slices. My air fryer is a small, 2.4 qt. though and it only took 5 minutes to cook three. The rest went into the freezer.
Loved the flavors here. I tried ,them but could not get them to stay rolled up. Every time I put one in the basket it sprang open. I even warmed the tortillas first. Resorted to standing them like tacos.
