Easy Whole Roast Chicken

This recipe is from a friend of mine. She made this Peruvian Whole Chicken and posted it on Facebook. She couldn’t stop raving about how tender and juicy the chicken was. I immediately asked for the recipe! OMG! Let me tell you, this chicken is AMAZING! Loaded with tons of great flavors and super easy to make in the air fryer. This is hands down the best way to cook a whole chicken.

What is an air fryer?

An air fryer is basically a countertop convection oven. It circulates air around the food for faster cooking. The rapidly circulating hot air makes the food crispy, much like deep frying but without the need for oil. You also don’t need to preheat the air fryer, making cooking in the air fryer much faster than cooking in the oven. 

How to Air Fry Whole Chicken

This is the easiest way to cook an entire chicken with only a few minutes of prep time. In a small bowl, combine vegetable oil or olive oil, lime juice, sugar, cumin, smoked paprika, oregano, garlic, salt, and pepper. Brush the marinade inside the chicken cavity and all over the outside of the chicken. Next, tie the wings and legs with some kitchen twine. Place the chicken breast side down in the air fryer basket and bake. Flip the chicken and continue baking until the internal temperature of the chicken reaches 165ºF. Use an instant read thermometer to check the chicken.

  • I was able to fit a 3.5-pound chicken in the basket of the air fryer. Depending on the size of your air fryer, you may need smaller chicken. If you have a larger air fryer, you can cook a larger chicken.
  • Omit the sugar for a low carb and keto friendly recipe.
  • You can season the chicken with anything you enjoy. Garlic butter, Italian seasoning, onion powder, bbq spice rub, or any of your favorite grilling marinades. If using a wet marinade, pat the chicken dry with paper towels before placing it in the air fryer. This will help you get extra crispy skin.
  • The chicken needs to cook until it reaches an internal temperature of 165ºF. Use a meat thermometer to check the temperature. You may need to adjust the cooking time depending on the size of your chicken and your brand of air fryer.
  • Let the chicken rest for at least 10 minutes before serving—this locks in moisture and ensure perfectly juicy meat.

Ingredients:

  • 1 (3½-lb) whole chicken
  • 2 Tbsp vegetable oil
  • 1 Tbsp lime juice
  • 2 tsp sugar, optional
  • tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder

Instructions:

  • Pat the chicken dry with a paper towel. Combine the remaining chicken ingredients in a small bowl and coat the chicken with the mixture.
  • Tie the legs together with a piece of cooking twine. Tie the wings against the breasts with another piece of twine.
  • Place chicken belly side down in the air fryer basket.
  • Set air fryer to 350ºF. Cook for 25 minutes.
  • Turn chicken over and cook an additional 25 minutes, until internal temperature reaches 165ºF.
  • Let chicken rest 5 to 10 minutes before carving.

Notes:

Omit sugar for a low-carb/keto-friendly dish.
Remove the skin for a low-calorie dish.
Cook until the chicken reaches an internal temperature of 165ºF.
