I came across this recipe in one of my old cookbooks. It caught my eye because it uses a jar of Alfredo sauce. SO interesting. I whipped up a batch for lunch last week and it was delicious! So creamy and packed full of great flavors. It was equally delicious heated up for dinner. All you need is a simple salad and some cornbread and you are set!
How to Make Chicken Chili with Alfredo Sauce
This white chicken chili is super easy to make. In a Dutch oven bring chopped chicken, white beans, Alfredo sauce, diced green chiles, chicken broth, corn, cheese, cumin, onion powder, salt, and pepper to a boil. Reduce heat and simmer 15 to 20 minutes.
- I used rotisserie chicken for the cooked chicken in the chili.
- Do I need to thaw the corn before cooking the chili? No. You can toss the corn into the pot frozen. Make sure to cook the soup until the corn is cooked.
- What Alfredo sauce do you use? I like Rao’s, Bertolli, and Trader Joe’s Alfredo sauce.
- Can I make Alfredo Chicken Chili in the slow cooker? Yes! Place all the ingredients in the crockpot and cook on LOW for 3 or 4 hours.
- Can chicken chili be frozen? Yes. You can freeze leftovers for a quick meal later. To reheat, thaw and warm in the microwave or on the stove. Add a little chicken broth if the chili is too thick.
- Is this white chicken chili gluten-free? Yes. As long as you use a gluten-free Alfredo sauce, such as Classico, this chicken chili will be gluten-free.
What to Serve with White Chicken Chili

Equipment:
Ingredients:
- 3 (15.5-oz) cans great northern beans, rinsed and drained
- 3 cups chopped cooked chicken breast
- 1 (15-oz) jar Alfredo sauce
- 2 cups chicken broth
- 1½ cups frozen corn kernels
- 2 cups shredded pepper jack cheese
- 1 cup sour cream
- 2 Tbsp minced onion flakes
- 2 (4-oz) cans diced green chilies
- 3 garlic cloves, minced
- 1 Tbsp ground cumin
- 1½ tsp white pepper
- 1 tsp cayenne pepper, optional
- salt, to taste
Instructions:

Oh, My!!! Delicious!!! I made this since my young granddaughter loves anything Alfredo!!! This was not spicy at all. Actually, I was concerned that the Pepper Jack Cheese would add to the spiciness and I cut it with Mozzarella. I would not do that again. I would use only Pepper Jack Cheese Also, if you are concerned with “heat”. just be sure to select Mild Diced Green Chilies! This is a keeper!!! Thank you!

Oh my this looks sooo good. Does using both cans of green chilis make it super spicy? Could it be cut down to half a can or one can?
