We spent last week in paradise. Amelia Island, FL to be more specific. We went down to celebrate my Dad’s birthday with my Mom and their friends. We decided to extended our stay for a few days. I mean, how could we not stay all week with views like this!!
Amelia Island is one of our favorite places. It is located on the Atlantic Ocean near the border of Florida and Georgia. It is about 40 minutes from Jacksonville. We go down at least once a year. We went in January and were excited to come back before football started.
Sunrise
The views from our room were amazing. We got so lucky with the weather!!
It was absolutely perfect.
**Where We Ate**
T-Ray’s Burger Station
We’ve eaten at T-Rays for lunch and their burgers are delicious.
Everyone says their breakfast is the best, so we were excited to finally try it.
The breakfast isn’t fancy. It’s just really good.
Chicken Legs and I shared a few things.
First up was the French Toast with bacon.
It was actually really good.
The hash browns have rave reviews. I can see why. There were excellent.
Several people told me to get the Biscuit and Gravy.
I love biscuits and gravy so I went for it.
It was delicious.
The biscuits are incredible! I wish I had one right now. SO buttery!!!
The gravy was great too. LOVED the chunks of sausage!

It was delicious!
One of our group got the Chicken Caesar Salad.
The grilled chicken was SO good! SO good!
I got the pizza of the day – pepperoni, canadian bacon, and feta.
I wish I had the leftovers right now. It was delicious.
The pizza is cooked in a wood fire oven.
The crust is nice and crispy on the outside and chewy on the inside. Really great pizza!
Next time we are going to try the Fried Mac & Cheese appetizer – it has rave reviews on Yelp.

The Salty Pelican Bar & Grill
We branched out and tried a new place on this trip – The Salty Pelican.
It was GREAT!
The appetizer special was this GIGANTIC pretzel.
It was served with beer cheese sauce. YUM!
The pretzel was served warm and had been brushed with herb butter.
It smelled as good as it tasted.
We also couldn’t pass up the Cheese Curds with Bacon.
O-M-G!
It was served with Pelican Sauce – kind of a zesty ranch sauce.
Chicken Legs got the fish tacos with fries.
Look at those fries!!!
I got the Spicy Chicken Sandwich.
It had bacon, cheese, jalapeƱos and Pelican sauce.
Really good!!
For my side I got the beans and rice.
This was GREAT!!! I highly recommend it!!!
The view from The Salty Pelican was hard to beat!!
We will definitely be back on our next trip.
There were so many things on the menu that we want to try.
I look forward to eating our way through the menu.

Sliders Seaside Grill
Sliders is a favorite. You can dine directly on the beach and they usually have live music.
It isn’t fancy, but it is such a fun place!!
We started with the fried pickles.
Two thumbs up!!
I went with the chicken tenders for dinner.
I got them tossed in their Sweet Chili Glaze.
I loved them! I almost made Chicken Legs go back the next night so I could eat them again.
I highly recommend them!!
Hush Puppies are my favorite.
The hush puppies at Sliders are really good!
One of the group got the Shrimp Tacos.
He said they were great.
The Pineapple Casserole was delicious!
Chicken Legs got the Blackened Red Fish Sandwich.
He said it was great.
Sliders has really good fries.

The Lobby Bar – Ritz Carlton
We ate several times at the hotel.
There is a fancy restaurant and a casual restaurant in the hotel, but we prefer the lobby bar.
One of our favorite things on the menu is the Meat Trio Flatbread.
Perfect to share!
We also LOVE their wings.
We tried the buffalo wings. YUM! Perfectly spicy.
My favorite wings are the Sweet & Spicy Wings.
I need to get the recipe for the sauce – it is my absolute favorite!!
Our favorite Ritz Carlton employee, Ellen, always brings us dessert.
This trip she brought out this incredible Chocolate and Salted Caramel Tart.
It was to-die-for!!!!
We wanted to lick the plate.
Ellen also brought out a sampling of desserts for us one night.
They were all amazing – seriously amazing!
I really couldn’t pick a favorite. I love that they are small so you can sample all of them!!

Sunset
The sunsets on this trip did not disappoint!
I want to move to Amelia Island and just take sunset pictures at the
hotel .
It is worth staying at The Ritz Carlton just for these amazing sunsets!
We are already planning our next trip down. We were going in December, but they are remodeling the lobby bar. We spend all our time in the lobby bar at night, so we decided to push the trip back to January when the renovation is done.
