Ground Beef & Jiffy Mix Casserole

This Bacon Cheeseburger Cornbread Bake is a weeknight favorite. It is super easy to make and tastes GREAT! Ground beef, bacon, hamburger seasoning, Velveeta, cheddar cheese, and cornbread. It takes no time to put together and bakes in about 20 minutes. Top the casserole with your favorite burger toppings and serve with some green beans. Give this a try the next time you need a quick and easy meal the whole family will enjoy!

How to Make Bacon Cheeseburger Cornbread Bake

This casserole is super easy to make. Start with cooking some ground beef in a skillet. Add cooked bacon, hamburger seasoning, Worcestershire sauce, Velveeta to the skillet. Cook until the cheese has melted. Spread the mixture into a baking dish. Top with shredded cheddar cheese. Prepare a box of Jiffy Mix according to package directions. Spread the cornbread over the meat mixture and bake. Top with a little extra cheese and bake just until melted.

  • Can substitute ground turkey or ground chicken for the ground beef.
  • Feel free to add a can of diced tomatoes, onions, or bell peppers to the meat mixture.
  • I used McCormick Grillmates Hamburger Seasoning. I buy it at Target and Walmart.
  • Can Bacon Cheeseburger Cornbread Bake be made in advance? If you want a really quick weeknight meal, you can mix up the meat mixture ahead of time and just top it with the cornbread batter right before baking.  
  • Can Bacon Cheeseburger Cornbread Bake be frozen? Yes. Bake the casserole as directed and cool completely. Cover the dish with plastic wrap and aluminum foil and freeze. The casserole will keep up to 3 months in the freezer.
    • To reheat the casserole after freezing, thaw and bake covered in the oven for about 30 minutes. Can also reheat the thawed casserole in the microwave.

What to Serve with Cornbread Casserole

As I said, this cheeseburger casserole is one of our all-time favorites. We like to top the casserole with some lettuce, tomatoes, pickles, ketchup, mustard, and ranch dressing. You can really put this over the top with some comeback sauce or pub sauce. YUM! We serve the dish with some french fries, green beans, or a quick salad. SOOOO good!

Bacon Cheeseburger Cornbread Bake – a family favorite! Super simple to make with only a few ingredients and bakes in about 25 minutes. Ground beef, bacon, hamburger seasoning, Worcestershire sauce, Velveeta, cheddar cheese, and Jiffy Mix. Ingredients:

  • 1 lb ground beef
  • ½ cup chopped cooked bacon
  • 1 Tbsp McCormick Gill Mates Hamburger seasoning
  • 4- oz Velveeta
  • 1 Tbsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 1 (8.5-oz) box Jiffy Mix plus ingredients to make cornbread

Instructions:

  • Preheat oven to 400ºF. Lightly spray an 8-inch baking dish with cooking spray. Set aside.
  • Brown ground beef and drain fat. Add cooked bacon, seasoning, Velveeta and Worcestershire sauce. Cook over medium heat until cheese has melted.
  • Transfer meat mixture to the prepared baking dish. Top with ½ cup cheese.
  • Prepare the Jiffy mix according to the box directions and spread over top of meat.
  • Bake, uncovered, for 20 minutes. Sprinkle with remaining cheese. Bake 3-5 minutes longer or until cheese is melted.
