Easy Homemade Cornbread Recipe

This Bacon Cornbread has quickly become a favorite at our house. This recipe is different from my regular cornbread recipe because it has some sugar in it. I am not usually a fan of sweeter cornbreads, but I loved this recipe! Now, don’t worry. This isn’t super sweet, the salty bacon helped cut down on the sweetness. Serve the bread warm with some butter and prepare to be wowed!

How to Make Bacon Cornbread

This bread is super easy to make with only a few simple ingredients. In a large skillet, cook bacon slices until crispy. Drain bacon fat on paper towels and chop. In a large bowl, stir together cornmeal, flour, sugar, baking powder, baking soda, and salt. In a small bowl, whisk together eggs, buttermilk, and melted butter. Pour wet ingredients into the dry ingredients. Stir until combined. Fold in corn kernels and chopped bacon. Pour cornbread batter into a 9×13-inch cake pan. Bake in a preheated oven until golden brown.

    • Can use pre-cooked bacon for easy prep.
    • Try this with turkey bacon or maple bacon.

Ingredients:

  • 2 cups corn meal, regular not self-rising
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 eggs
  • cups buttermilk
  • ½ cup melted butter
  • 2 cups frozen corn kernels thawed
  • 1 cup cooked bacon, diced

Instructions:

  • Preheat the oven to 400ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • In a large bowl whisk together corn meal, flour, sugar, baking powder, baking soda and salt. Stir in eggs, buttermilk, and melted butter, then fold in the corn and bacon. Pour the batter into prepared pan.

  1. I've been looking for a good cornbread recipe for a while now. Can you tell me if this recipe produces a dry, crumbly bread or is it moist. Our local supermarket does catering and they make the most delicious cornbread. SUPER MOIST…but alas, they won't share their recipe. My search goes on. I hope it ends here! 🙂
