This Bacon & Green Chiles Breakfast Casserole is comfort food at its best. A savory egg casserole loaded with bacon, green chiles, and three kinds of cheese. How to Make Bacon & Green Chiles Breakfast Casserole
This Bacon & Green Chiles Breakfast Casserole is very easy to make. Start with cooking some bacon. While the bacon is cooking, whisk together eggs, cottage cheese, flour, baking powder, and salt. Stir in the cooked bacon, green chiles, Monterey Jack and Cheddar cheese. Pour into a baking dish and pop it in the oven. Super easy!
To cut down on prep time, you can use precooked bacon. You would need about a 1 cup of cooked chopped bacon for the recipe. I buy those bags of bacon pieces at Costco and Sam’s. They are such a time saver!!!
The green chiles aren’t spicy in this recipe. If you want to give the dish a kick, add some chopped pickled jalapeños or a can of drained Rotel diced tomatoes and green chiles. You can also swap the Monterey Jack cheese for some Pepper Jack cheese.
Can Egg Casserole be Frozen?
You can make this casserole in advance and refrigerate or freeze for later. To bake after freezing, thaw completely and bake as directed below. To reheat after freezing, thaw completely. Cover the casserole with foil and bake at 350ºF for 30 to 40 minutes.

Bacon & Green Chiles Breakfast Casserole
Ingredients:
- 1 lb bacon
- 10 eggs, beaten
- 1 (24-oz) container cottage cheese
- ¼ cup all-purpose flour
- 1 tsp baking powder
- ¾ tsp salt
- 1½ cups shredded Monterey Jack cheese
- 1½ cups shredded cheddar cheese
- 3 (4-oz) cans chopped green chiles, drained
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
- Cook bacon until crisp. Drain fat and finely chop.
- Whisk together eggs, cottage cheese, flour, baking powder, and salt. Stir in cheeses, green chiles, and cooked bacon. Pour into prepared baking dish.
- Bake uncovered for 45 to 55 minutes, until the middle is puffed and the edges are golden brown.
- Let the casserole stand 5 to 10 minutes cutting into pieces and serving.

I love this egg casserole! I made a few little changes to suit everyone’s taste in my family. I used ham instead of bacon, pepper Jack cheese instead of Colby Jack and sometimes I use sharp and colby Jack, a dozen eggs instead of 10 and only one can of chilies. Once I only had a 16 oz container of cottage cheese so added a little cream and more cheese than called for…turns out great every single time I make it no matter how I adjust it.
Could I make it the night before and bake it in AM?
Could you make this is a muffin tin as well? Would you need to alter the time or temperature if you did that? Thanks!!!
I’m sure you could. It would take less time in a muffin tin, so you would need to adjust the cooking time accordingly.
Made this for brunch today and it was fabulous. Used several kinds of cheese – using up what was open in the fridge. This recipe is a keeper. Next time I might had a few jalapenos to it.
Made this for our breakfast this morning and it’s absolutely delicious! I added a little sour cream on top of mine after baking. Sooooo good.

I love this recipe I did leave out the green chiles, as the people I was cooking for could not eat spicy foods, but we all loved it none the less.
Next time add 1 lbs of cooked and drained ground beef . Now you have a bacon cheeseburger casserole.
