Quiche is one of our favorite meals. I am always thinking of new flavor combinations. Since the Masters is this week, I thought I would try a Bacon & Pimento Cheese Quiche. O-M-YUM! I am not even a huge pimento cheese fan, and I ate two slices of this quiche! While you may think quiche is only for breakfast, we actually love it any time of the day! We ate this quiche for lunch and had the leftovers for dinner. SO good!
How to Make Bacon & Pimento Cheese Quiche
This quiche is very easy to make. Spread some pimento cheese and cooked chopped bacon in the bottom of a pie crust. Whisk together eggs, heavy cream, and sour cream. Pour over the bacon and cheese and bake.
- You can use a frozen or homemade pie crust. Either is just fine.
- I used Palmetto Pimento Cheese for the pimento cheese in this dish.
- To cut down on the prep time, I used pre-cooked bacon. Feel free to add some mushrooms and onions to the filling. I also add green onions sometimes.
- Can Homemade Quiche be made in advance? Yes! You can assemble the quiche ahead of time and refrigerate it overnight.
- Can Homemade Quiche be frozen? Yes! You can make this quiche ahead of time and freeze it baked or unbaked for later.
- I prefer to freeze the quiche unbaked. Assemble the quiche and place in the freezer. Once the quiche is frozen place it in a freezer bag. When ready to bake, thaw the quiche in the refrigerator before baking as directed below.
- To freeze the baked quiche, cool the quiche completely and wrap the pie plate with plastic wrap and aluminum foil. When ready to reheat, thaw and reheat in the oven or microwave before serving.
- How long will Homemade Quiche last? The quiche will keep 3 to 4 days covered in the refrigerator.

Bacon & Pimento Cheese Quiche
Equipment:
Ingredients:
- ½ (12-oz) container pimento cheese
- ⅓ cup chopped cooked bacon
- 3 Tbsp sour cream
- 1 cup heavy cream
- 3 large eggs
- salt and pepper, to taste
- 1 (9-inch) deep dish pie crust
Instructions:
- Preheat oven to 350ºF.
- Put pimento cheese and bacon in the bottom of the pie crust.
- Whisk together eggs, sour cream, and heavy cream. Pour over bacon mixture.
- Bake for 60 minutes, until set.

This was the best quiche yet! I made your hissy fit quiche and the family loved it too. But this one…wow! I used palmetto pimento cheese with bacon in it. But I still used the 1/3 cup bacon! It was amazing-even if you are not a fan of pimento cheese…you will love this! Thank you for sharing! This is a definite keeper!

Do you need to thaw the pre made crust if you are going to make ahead?
I did not thaw it first. I just took it out of the freezer when I started to make the quiche.
