I use a combination of yellow squash and zucchini in this Baked Greek Squash and Feta. It only takes a few minutes to prepare. I sliced the squash thin, tossed it in olive oil, Greek seasoning and feta. It was ready and waiting before my oven had preheated.
I know a lot of people aren’t familiar with Greek seasoning. I used Cavender’s All-Purpose Greek Seasoning. I linked to it in the recipe below. It is readily available at the grocery store, Walmart and Target. I use it on tons of stuff! They also have a salt-free version.
