Stop what you are doing and add these Baked Sweet Potato Grits to your menu! OMG! This casserole is SO good! I’m not even a big fan of sweet potatoes and I had two helping of this dish. Grits, chicken broth, sweet potatoes, gouda cheese, eggs, and heavy cream. Super simple to make and it tastes great. If you think you don’t like grits, give this dish a try. I am sure it will turn you into a grits lover with one bite.
How to Make Baked Sweet Potato Grits with Gouda
This casserole is very easy to make. Bring some chicken broth to a boil and add the grits and cook until thickened. Remove from heat and add sweet potatoes, cheese, and butter; stir until melted. Stir in heavy cream. Slowly stir in eggs until blended. Season with salt and pepper. Transfer grits to prepared dish. Sprinkle with more cheese and bake.
- I used Quaker Old Fashioned Grits. You can substitute quick-cooking grits or stone ground grits. You will just need to adjust the cooking time accordingly. I do NOT recommend instant grits.
- You can use homemade mashed sweet potatoes or store-bought potatoes.
- If using homemade potatoes, you make them ahead of time and refrigerate until you are ready to make the casserole.
- You can substitute water for the chicken broth if you prefer.
- Can Grits Casserole be made in advance? Yes! You can assemble the casserole and refrigerate it overnight before baking. You will need to add a few minutes to the cooking time if baking straight from the refrigerator.
- Can Grits Casserole be frozen? Yes! You can assemble the casserole and freeze it before baking. Assemble the casserole and let it cool completely. Cover the dish with plastic wrap and foil and freeze.
- To bake casserole after freezing, thaw completely and bake as directed.

Baked Sweet Potato Grits with Gouda
Ingredients:
- 3 cups chicken stock
- 1 cups old fashion grits
- 1½ cups mashed sweet potatoes
- ¼ cup butter cubed
- ¼ cup heavy cream
- 2 large eggs lightly beaten
- ¼ tsp onion powder
- ¼ tsp garlic powder
- salt and pepper, to taste
- 1¼ cup shredded gouda cheese, divided
Instructions:
- Preheat oven to 350° F. Lightly spray a 9-inch baking dish with cooking spray. Set aside.
- In a large saucepan, add chicken stock; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 15 to 20 minutes or until thickened, stirring occasionally. Remove from heat.
- Add mashed potatoes and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Add onion powder, garlic powder, salt, and pepper. Stir in 1 cup of cheese until melted.
- Transfer grits to prepared dish. Sprinkle with remaining cheese.
- Bake, uncovered, 30 to 35 minutes.

This sounds amazing! My family loves your recipes!!! I was wondering if you could substitute FF half & half for the heavy cream. I know if will not be quite as creamy, however my husband is not suppose to have the fat. The cheese and will definitely be pushing the limits so I wanna try and save were I can. Thanks for all your great recipes they have changed our dinners 😊

When you say can substitute the sweet potatoes with store bought, do you mean canned yams? Although I would use real sweet potatoes, I’m just curious.
No, I mean a package of premade mashed sweet potatoes from Bob Evans or another brand. If the deli section has already made sweet potatoes, that works too. I’ve never tried this with canned yams.
