I used about four ripe bananas in this cobbler. Feel free to use more or less depending on your personal preference.

Banana Bread Cobbler
Ingredients:
Streusel Topping
- ¾ cup packed brown sugar
- ½ cup self-rising flour
- ½ cup butter, softened
- 1 cup uncooked regular oats
- ½ tsp cinnamon
- ½ cup chopped pecans
Instructions:
- Preheat oven to 375ºF. Lightly grease an 11x7x2-inch or 9x9x2-inch pan with cooking spray.
- Whisk together flour, sugar and milk. Whisk in melted butter. Pour batter into prepared pan.
- Top batter with sliced bananas.
- Stir together brown sugar, self-rising flour, softened butter, and cinnamon until crumbly.
- Stir in oatmeal and pecans. Sprinkle over bananas.
- Bake for 40 to 45 minutes, until golden brown.

I made this last night as dessert for a family meal – it came together in a snap! I made my own self-rising flour by adding baking powder and salt. We ate ours with Redi-Whip, warm from the oven. SO GOOD! I will definitely keep this one for the future! Thanks!

What is the consistency of the filling/base? Does it bake up to a moist bread or is it thick pudding?
