Pin This RecipeThis recipe was inspired by a comment on my Bubble Up Pizza post. Sarah H. left a comment that she was going to modify the regular Bubble Up Pizza her husband was picky about pizza but loved BBQ Chicken Pizza. I thought that was a brilliant idea!
This biscuit pizza is super easy to make. I started with my original recipe as the base and made a few simple swaps. BBQ sauce for the pizza sauce. Added some shredded rotisserie chicken and bacon (because everything is better with bacon). I topped the biscuits with cheddar and mozzarella cheese and some green onions. This was super delicious! We both loved it! Give this a try if you need a change from your regular pizza night.

BBQ Chicken Bubble Up Pizza
Ingredients:
- 1 (12-oz) can Grands Jr. flaky biscuits
- 1¼ cup BBQ sauce
- 2 cups chopped cooked chicken
- ½ cup chopped bacon
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- green onions to taste
Instructions:
- Preheat oven to 350ºF.
- Cut biscuits into quarters and place in medium bowl. Toss biscuits with BBQ sauce. Add chicken, bacon and half of the cheese. Toss until well blended.
- Spray a 9×13 pan with cooking spray. Pour biscuit mixture into pan and top with remaining cheese and green onions.
- Bake for 25-30 minutes, or until biscuits are done.

This looks amazing but, alas, in Australia we do not have Grands Jr. flaky biscuits. What can I substitute instead as I really would love to make this recipe. Perhaps pizza or scone dough? Thank you.
Would it be weird to use ham? We have leftover Easter ham.

Maybe this is a dumb question, but do you cook the chicken and bacon at all before putting them in?
Yes – the chicken & bacon should be cooked before putting in the casserole. Enjoy!????
This was absolutely delicious! Will definitely make again and I have pinned all of your Bubble Up recipes, now.
Can you share where you get the Grands Jr. biscuits? They only had regular at Wegman's and it was way too much dough (never thought I'd say that!) as it wasn't able to cook all the way through. But, it was still delicious and we ate all around the uncooked biscuit – that's how yummy it was!
Amy – I find them everywhere – Walmart, Target, Publix, Winn Dixie. If you can't find the Grands Jr, you can use the regular Grands and use all but one of the biscuits. Cut the Grands into 6 pieces instead of 4.

It has been forever since I did a bubble up pizza and with all of the football practices, it would come in handy for dinner these days.

I haven't ordered a pizza this year! Somewhere, I don't remember what it was or where it was, I got the idea for Texas toast pizza. I'm sure it was made with garlic toast, which doesn't like me, I changed it to the Pepperidge Farm cheese Texas toast and build it just like pizza. Sauce, sausage, mini-pepperoni and cheese. Pop it in my toaster oven for 10 minutes and I have hot pizza!! 3 pieces if I'm really hungry, 2 if I'm not. The rest of the toast stays in the freezer. No more reheating pizza!!
(Contadina has a squeeze bottle of sauce that stays good for a month.)
