New Year’s is coming up. I don’t know about you, but I always eat black-eyed peas for luck in the new year! This year we are having this Beef & Black-Eyed Pea Burrito Casserole. Taco meat, Rotel tomatoes, cream of chicken, cream of mushroom, enchilada sauce, black-eyed peas, tortillas, and cheese. This is a cross between king ranch casserole and enchiladas, and is one of the best Mexican casseroles we’ve ever eaten! You must give this a try!
How to Make Beef & Black Eyed Pea Burrito Casserole
This casserole is very easy to make with a few simple ingredients. Start by cooking ground beef in a skillet. Add taco seasoning and water and simmer for 5 minutes. Remove from heat. Mix in Rotel diced tomatoes and green chilies, cream of mushroom soup, cream of chicken soup, enchilada sauce, a dash of hot sauce, and black eyed peas. Layer ground beef mixture, corn tortillas, and cheese alternately in a baking dish. Bake until bubbly.
- You can substitute ground turkey for beef.

- You can use any condensed soup that you prefer. Cream of chicken, cream of mushroom, cream of celery all work great.

- I used corn tortillas. Feel free to use flour tortillas if you prefer.
- Is Burrito Casserole spicy? We did not think this was spicy. If you are worried about the heat, use MILD Rotel diced tomatoes and green chiles.
- For a gluten-free casserole, use gluten-free soup and enchilada sauce.
- Can Burrito Casserole be made in advance? Yes. You can assemble the casserole ahead of time and refrigerate until ready to bake.
- Can Burrito Casserole be frozen? Yes. You can assemble the casserole and let it cool completely. Cover the pan with plastic wrap and aluminum foil and freeze. When ready to bake, thaw and bake as directed.
- You can also freeze the baked casserole and reheat it in the oven or microwave.
What to Serve with Mexican Casserole
This casserole has quickly become a favorite at our house. We’ve made it several times and always enjoy it. Top the casserole with our favorite taco toppings – lettuce, tomato, sour cream, jalapeños, and salsa. We like to serve this with a salad or some Mexican rice. Either way, it is delicious! Beef & Black Eyed Pea Burrito Casserole
Ingredients:
- 1½ lbs lean ground beef
- 1 (1-oz) packet taco seasoning
- ½ cup water
- 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
- 1 (10.5-oz) can cream of chicken soup
- 1 (10.5-oz) can cream of mushroom soup
- 1 (10-oz) can enchilada sauce
- ½ tsp hot sauce, optional
- 2 (15-oz) cans black eyed peas, drained
- 16 corn tortillas, cut into eighths
- 3 cups grated cheddar cheese, divided
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
- Brown ground beef in a large skillet. Drain fat. Add taco seasoning and water. Simmer for 5 minutes. Remove from heat. Stir in Rotel tomatoes, cream of chicken, cream of mushroom, enchilada sauce, hot sauce, and black eyed peas.
- Spread ½ to ¾ cup of the meat mixture in the bottom of the baking dish. Top with ⅓ of the tortillas, ⅓ of the remaining meat mixture, and 1 cup of cheese. Repeat layers 2 more times.
- Bake for 30 to 35 minutes, until bubbly.

This was really good. I wasn’t sure how the black eyed peas would turn out, but you can’t taste them at all. Very very good meal. Leftovers tasted even better!
