This is one of the best soups I’ve made. It tasted amazing! The best part about this recipe is you just dump everything in the slow cooker and let it simmer all day long. Chicken Legs wasn’t looking forward to this soup, but as soon as he tasted it he loved it! I knew he would. He gets like that sometimes – thinking he won’t like something when I know he will!. I think it helped that I used stew meat in the soup instead of ground beef. It was much a heartier soup. More manly!

I used a store bought enchilada sauce for this recipe because I had some in the pantry. If you don’t want to use store bought, here is my recipe for Homemade Enchilada Sauce (here). Either way will be delicious. This would also make a great freezer meal. Throw everything in a gallon freezer bag and freeze it until you are ready to cook. Can’t beat this for a quick and yummy dinner!

  1. Hi Steph! How do you think this would be without the cheddar soup…? I'm dairy free. Do you have any thoughts on what I could use to substitute?

  2. Made this tonight for dinner and it was a HUGE hit – my son (11 years old) literally licked his bowl clean! Thank you for another great recipe!!
