I use Pillsbury Grands Jr. biscuits, not the big Pillsbury Grands biscuits. I think the smaller biscuits work better in the bubble up recipes. They don’t crowd the pan and cook all the way through. If you want to use the bigger Pillsbury Grands biscuits, cut them into 6 pieces and throw one of the biscuits away. That will help ensure that the biscuit dough gets cooked all the way through.
We made this Beefy King Ranch Bubble Up for lunch and we both cleaned our plates! Feel free to top your piece with your favorite taco toppings. We did sour cream, salsa, olives, jalapeños and cheese. YUM! Add some easy refried beans and you have a quick and easy fiesta!
Beefy King Ranch Bubble Up
Equipment:
Ingredients:
- 1 lb ground beef
- 1 (1-oz) package taco seasoning
- ⅔ cup water
- 1 (10.5-oz) can Cream of Chicken Soup
- 1 (10-oz ) can Rotel Diced Tomatoes with Green Chilies
- ½ tsp garlic powder
- ½ tsp onion powder
- 8- oz Velveeta cheese cubed
- 1 (12-oz) can Pillsbury Grands Jr Biscuits (10-count)
Instructions:
- Preheat oven to 350°F. Spray a 9×13-inch pan with cooking spray. Set aside.
- In a large skillet, cook ground beef until no longer pink. Drain fat and return to skillet. Add taco seasoning and water. Simmer 5 minutes.
- Stir in soup, Rotel tomatoes, garlic and onion powder. Add Velveeta cheese, cooking until melted. Remove from heat.
- Cut biscuits into quarters. Stir into beef and cheese mixture. Pour mixture into prepared 9×13-inch pan.
- Bake for 30 minutes. Top with favorite taco toppings, if desired.

Made this tonight and everyone enjoyed it. We put lettuce, tomatoes, cheese, sour cream, and taco sauce on it. I will make this again, thanks for sharing. I cant wait to try some other bubble up recipes.
Made this on vacation for Taco Tuesday. It was a hit. I used ground turkey instead of beef. Next time I’ll leave the biscuits out and serve it as a dip with tortilla chips.
