Soup is one of our go-to meals in the winter. This Beer Cheese Soup is a favorite. It is rich, creamy, and totally delectable! We’ve made this several times and really enjoy it. It is super easy to make and is ready to eat in under 30 minutes. This soup is especially delicious topped with some extra cheese and smoked sausage. Toss in a few pretzel roll bites and you are set! Comfort food at its best.
How to Make Beer Cheese Soup
This soup is very easy to make. Start with melting some butter in a Dutch oven. Whisk in some flour. Gradually whisk in a bottle of beer until smooth. Whisk in stock, Worcestershire sauce, mustard, salt, pepper, and cayenne. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Reduce heat. Stir in cheese until melted. While the soup is simmering, cook some smoked sausage. Serve the soup in bowls and garnish with the cooked sausage.
- For the smoked sausage in this recipe, I used Conecuh smoked sausage. You can use any brand that you prefer or substitute smoked turkey sausage.
- Don’t like smoked sausage? Feel free to swap it for bacon or leave it out altogether for a vegetarian dish.
- You can use any beer that you enjoy. I used Michelob Ultra. I suggest using a light beer so it doesn’t overpower the soup.
- If you don’t want any alcohol in the soup, you can substitute a non-alcoholic beer.
- I used cheddar cheese. Feel free to use any cheese that you prefer.
- Can Beer Cheese Soup be frozen? Yes! Let the soup cool completely and transfer to plastic containers or freezer bags and freeze. To reheat, thaw and reheat on the stove or in the microwave.

As I said, we LOVE this soup! We usually serve the soup in a bowl with extra cheese and smoked sausage and a pretzel roll. It is also great served in a bread bowl. Rip the bread and dunk it into the soup as you eat it. YUM!

Ingredients:
- ¾ cup butter cubed
- ¾ cup all-purpose flour
- 1 (12-oz) bottle light beer
- 4 cups chicken or vegetable stock
- 2 tsp Worcestershire sauce
- 1 tsp dry mustard
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp cayenne pepper
- 4 cups shredded cheddar cheese
- 1 lb smoked sausage, diced (optional)
Instructions:
- In a large saucepan, melt butter over medium heat. Stir in flour until blended; gradually whisk in beer until smooth. Whisk in stock, Worcestershire sauce, mustard, salt, pepper and cayenne.
- Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Reduce heat. Gradually stir in cheese until melted.
- While the soup is simmering, sauté smoked sausage until it starts to brown. Drain any fat and garnish the soup with the cooked sausage or stir in into the pot.

This recipe is GREAT! I substituted browned venison (drained) reserving some for the topping served with water crackers and my hubby had 3 bowls! Fantastic! Would be great to freeze individual servings and send with hunters for hunting trips! Fills and warms you up.
