The Biscuits and Gravy Breakfast Casserole is dangerously delicious. Super simple to make and has TONS of great flavor. Refrigerated biscuits baked in a quick homemade sausage gravy and cheddar cheese. Now, this isn’t just any sausage gravy recipe. This is the best of the best sausage gravy recipes. The secret ingredient is Worcestershire sauce in the sausage gravy. It makes all of the difference!! Trust me! One bite of this dish and you will be blown away. Comfort food at its best!
What does Bubble Up mean?
Bubble up refers to casseroles made with refrigerated biscuits. The biscuits bubble up when they are baked. I’ve made several bubble up casseroles for the blog – pizza, peach cobbler, and even an enchilada bubble up casserole. They are all fantastic.
How to Make Biscuits & Gravy Bubble Up
This casserole is very easy to make with only a few simple ingredients. In a large skillet, cook breakfast sausage over medium heat until no longer pink. Remove from skillet and drain excess grease. In the same pan, melt butter. Whisk in flour and whisk constantly for one minute. Gradually whisk in whole milk, Worcestershire sauce, salt, and black pepper. Bring to a boil, whisking constantly; cook until it starts to thicken, about two or three minutes. Remove the skillet from the heat. Stir in the cooked sausage.
Cut refrigerated biscuits into six pieces each. Place half of the biscuit pieces in the bottom of a baking dish sprayed with nonstick cooking spray. Pour half of the sausage gravy mixture over the biscuit pieces. Sprinkle with shredded cheddar cheese. Top the cheese with the remaining biscuit pieces. Spread the remaining gravy mixture over the tops of the biscuits and top with more cheese. Bake uncovered until the bubbly and golden brown.
Helpful Tips & Frequently Asked Questions
- I use a can of Pillsbury Grands buttermilk biscuits. You can use a can of flaky layer biscuits if you prefer.
- Do not cook the biscuits. Add the biscuit dough to the casserole uncooked.
- I use Jimmy Dean breakfast sausage. You can use any brand or flavor that you enjoy.
- Can substitute turkey sausage for a lower calorie option.
- Cover the baking dish with aluminum foil if the biscuits start to get too brown.
- Can omit the cheese if desired.
- Make sure to spread the biscuit dough evenly in the baking dish so all of the biscuit dough gets cooked. You don’t want any clumps of biscuit dough in the casserole.
- Don’t want to make the casserole? You can just bake some biscuits and serve them with the gravy recipe.

Equipment:
Ingredients:
- 1½ lbs ground pork sausage
- 5 Tbsp butter
- ¼ cup all-purpose flour
- 3 cups milk
- 1 Tbsp Worcestershire sauce
- ¾ tsp salt
- ½ tsp pepper
- 1 (16-oz) can refrigerated Grands! biscuits
- 1 cup shredded sharp Cheddar cheese
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
- Cook sausage in a large skillet over medium-high heat until crumbly and no longer pink; remove from skillet, and drain.
- In the same pan, melt butter. Whisk in flour and whisk constantly for one minute. Gradually whisk in whole milk, Worcestershire sauce, salt, and black pepper.
