Black eyed peas are a must for New Year’s Day. Southern tradition says black eyed peas bring you luck in the new year. I never take any chances with luck in the new year, so we always have to eat black eyed peas!
This Black Eyed Pea Cornbread Casserole is loaded with all our favorites! Black eyed peas, sausage, jalapeños, green chiles, cheddar cheese, and cornbread. It is ridiculously good! All you need is a side of greens and you are all set for your New Year’s Day meal!
How to Make Black Eyed Pea Cornbread Casserole
This looks like a lot of ingredients, but you are basically just making homemade cornbread and stirring everything else in the batter. Start with cooking some sausage. Next combine cornmeal, flour, salt, baking soda, eggs, and buttermilk. Stir in the cooked sausage, black eyed peas, cheese, creamed corn, jalapenos, and diced green chiles. Pour the batter into a baking dish and bake.
- I used a roll of Jimmy Dean sausage.
- This does have a kick from the jalapeños and green chiles. If you are worried about the heat, I would suggest omitting the jalapeños.
- You can make this ahead of time and freeze it for up to a month. Bake the casserole and then freeze it. To reheat the casserole, thaw it and bake covered for 30 minutes at uncovered for 10 minutes. If you want to reheat this casserole frozen, bake it covered for an hour and uncovered for 10 minutes.

Black Eyed Pea Cornbread Casserole
Ingredients:
- 1 lb hot pork sausage
- 1 cup white cornmeal
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp baking soda
- 2 eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 1 (15-oz) can black eyed peas, drained
- 2 cups shredded cheddar cheese
- ¾ cup creamed corn
- 1 (4-oz) can diced jalapeños
- 1 (4.5-oz) can diced green chiles
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
- In a skillet over medium high heat, cook sausage until crumbled and no longer pink. Drain fat. Set aside.
- Combine cornmeal, flour, salt, baking soda, eggs, buttermilk and oil.
- Stir cooked sausage, black eyed peas, cheese, creamed corn, jalapeños and green chiles into cornbread batter. Pour into prepared pan.
- Bake, uncovered, for 1 hour.
Notes:

I have made this recipe several times. We are growing fresh okra so I cut some up and added it to this recipe. It is delicious! I took some to a potluck at church and there was none to bring home. I shared the recipe with those who were interested in having it. I do cook onions, bell peppers, and garlic along with the sausage. I use the whole can of creamed corn.

I was on the search for a recipe to use a can of Hoppin’ John I had in my cabinet, and came across this casserole. I subbed a couple of things like the canned Hoppin’ John for the black eyed peas, and with no creamed corn in the house I used canned seasoned greens. I had everything else on hand, so I thought I’d give it a try. OMG!! This is a delicious casserole. I will definitely be adding this to New Year’s brunch next year. Thank you for the recipe!!

Have to say I was surprised I liked it! I do not like black-eyes peas or cornbread. I found this not for me but for a church event. I used a white cornbread mix and did not add the salt or baking soda. I doubled the recipe so I measured out 2 cups of mix. I also had to do the vinegar in milk trick. I used 2 1/2 lbs of sausage because that’s how much what I had came in. I mixed cheddar and colby/jack to make 4 cups because I had it on hand. I didn’t add the jalapenos because I wasn’t sure everyone would like them. I will add them in just for me/family. I did top my serving off with salsa. Very tasty! Again, I doubled the recipe in a 9×13 pan and cooked it an hour. It came out perfect for my oven. I was concerned about 1 cup of oil! Yikes…but again it came out perfect and not oily. So, this will be a keeper for me. Finally, a way to eat black-eyed peas!
Would regular milk be ok instead of buttermilk?
You can make buttermilk from milk. For every 1 cup of milk, stir in 1 tablespoon lemon juice or vinegar.

Super excited to make this for dinner tonight !! Swore I had sausage in the freezer, WRONG. So no choice but to use ground beef, I will be sending an update .
I used the whole can of creamed corn, added 1 tablespoon sugar, about 1 cup chopped onions and about 3/4 cupped chopped bell peppers. It was even more flavorful!
Currently in the oven but I just substituted 2 boxes of jiffy corn bread mix instead of making the cornbread from scratch. Fingers crossed.

I cook a lot of casseroles using Jimmy Dean sausage and always omit the salt. The sausage and the cheddar has enough salt to suit my taste buds. I will definitely be trying this. I am trying this recipe, it is already in the oven, however on the video yellow cornmeal is used. I hope mines turn out good by using what the recipe called for, white cornmeal

I made this today. It was awesome!! I would eat this any day, not just New Years! The only thing I did different than the recipe was adding onion to the sausage while cooking.

It turned out very oily and greasy. I think 1/2 cup of oil is to much.
Mine turned out perfect with 1/2 cup of oil. I definitely don’t think it is too much. If you followed the recipe as written, it would have turned out like the photo.

I haven’t tried that. You will need to omit the salt and baking soda if you try the Jiffy mix.
