This Blackened Chicken Alfredo recipe was inspired by my favorite restaurant, Hamilton’s on Magnolia in Auburn, AL. I love their blackened chicken with roasted garlic alfredo. I get it every single time I eat there. Unfortunately, I don’t get the opportunity to eat there as much as I would like, so I came up with a great copycat recipe to make at home. OMG! This Blackened Chicken Alfredo is crazy good! Packed full of amazing flavor and ready to eat in about 15 minutes.! I might like this better than the original! All you need is some bread or a quick salad and dinner is done!
What is Blackened Chicken Alfredo?
Blackened Chicken Alfredo is chicken that is seasoned with a combination of spices and served over a bed of fettuccini alfredo. The seasoning is similar to creole seasoning. This Blackened Chicken is marinated in a combination of garlic, onion, thyme, oregano, paprika, tarragon, salt, red pepper, black pepper, olive oil, and Worcestershire sauce. It packs SO much flavor.
Is Blackened Chicken Alfredo Spicy?
Blackened Chicken Alfredo isn’t a spicy dish. It is more flavorful than spicy. There is only a little red pepper in the marinade. You can certainly reduce or eliminate it if you are worried about the heat. It won’t affect the overall flavor of the dish.
How To Make Blackened Chicken Alfredo Like Zatarain’s
Blackened Chicken Alfredo is very simple to make. Simply whisk together the seasoning mixture and pour over the chicken breasts. Let the chicken marinate in the refrigerator at least 8 hours. I like to mix everything up before I go to bed and cook it after work.
When ready to cook this Blackened Chicken Alfredo, heat a skillet on medium-high heat. You aren’t going to need any oil. There is plenty of oil in the marinade. Once the skillet is hot, add the chicken breasts and cook for about 5 minutes on each side. The cooking time will depend on how large your chicken breasts are. You want to make sure the chicken has an internal temperature of 165ºF.
While the chicken is cooking, cook the pasta. Drain the pasta and put back in the pot. Add the Alfredo sauce and some diced tomatoes and green onions. Toss it all together.
To serve, slice the cooked chicken and place on top of the pasta in a bowl or a plate. Garnish the dish with some fresh parmesan cheese. SO GOOD!

Feel free to add broccoli, mushrooms, sundried tomatoes to the pasta mixture. You can even swap the fettuccine for your favorite pasta noodle. Penne pasta is great too!

1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp dried thyme
1 Tbsp dried oregano
1 Tbsp paprika
1 Tbsp dried tarragon
1 tsp salt
1 tsp ground red pepper
1/2 tsp black pepper
2/3 cup olive oil
1/2 cup Worcestershire sauce
4 chicken breast, pounded to an even thickness
1 (12-oz) package dried fettuccine
1 (15-oz) jar alfredo sauce
1 Roma tomato, chopped
3 green onions, chopped
Combine first 11 ingredients in a heavy-duty ziplock bag; add chicken. Seal and marinate in refrigerator at least 8 hours, turning the bag occasionally.
Remove chicken from bag and discard marinade. Cook chicken in a skillet over medium-high heat for 5 minutes on each side or until well browned. Slice chicken diagonally and set aside.
Cook fettuccine according to package directions. Warm alfredo sauce and toss with cooked pasta. Stir in the chopped tomato and green onions.
To serve: place pasta in a bowl or on a plate. Top with sliced chicken and garnish with parmesan cheese.
Can substitute chicken tenderloins or chicken thighs for the chicken breasts.
