Today I am sharing with you a fabulous recipe from the brand new Add a Pinch cookbook by my blogging friend, Robyn Stone. This is Robyn’s debut cookbook, and it is fabulous. It is packed full of mouth-watering recipes. I had a really hard time picking just one recipe to share with you, but I finally decided on this Broccoli Pineapple Salad. We love broccoli and pineapple, so we were excited to try this! The hardest part of the recipe is chopping all the fruits and veggies.
How to Make Pineapple Broccoli Salad
This recipe is super simple and crazy good!! I made this yesterday, and we ate this with lunch and dinner. It is really, really good. We could have actually made this our meal! Chicken Legs said this needed to be on the menu at our favorite bakery-cafes! It would be the most popular side dish on the menu! LOL!
To make the salad, combine the broccoli, cheese, onion, grapes, pineapple, pecans, and bacon in a large bowl. In a small bowl, combine the mayonnaise, vinegar, and sugar. Spoon the dressing over the broccoli mixture and toss gently until evenly coated. Refrigerate the mixture until ready to serve.
Broccoli Salad for a Crowd
This Broccoli Pineapple Salad makes enough for 8 to 10 people or more. It would be great for a spring/summer cookout, potluck, camping, or Easter side dish. It will keep for several days in the fridge. I can already tell you that this will be a staple in our house this spring and summer. SO good!!!

Broccoli Pineapple Salad
Ingredients:
- 6 cups fresh broccoli florets
- 1 cup grated Cheddar cheese
- ½ medium red onion, chopped
- 1 cup red seedless grapes halved
- ½ cup diced fresh pineapple
- ¼ cup chopped pecans
- 3 slices of cooked bacon chopped
- 1 cup mayonnaise or Greek yogurt
- 2 Tbsp apple cider vinegar
- 1 Tbsp sugar
Instructions:
- In a large bowl, combine the broccoli, cheese, onion, grapes, pineapple, pecans and bacon.
- In a small bowl, combine the mayonnaise, vinegar, and sugar. Spoon the dressing over the broccoli mixture and toss gently until evenly coated.

Excellent salad! Even my husband was “wowed” by it…said it was the best one he’d had in a long time! I made it exactly as written, except I added red wine vinegar instead of cider vinegar (because that’s what I had). Also after tasting the dressing, I added a couple more Tblsps. sugar. Great when freshly made, however, I must have had a very strong red onion. The next day the leftover salad was extremely “oniony”. When I make this again, I’m going to taste my red onion first, and if it’s a strong one, I’m going to either soak the chopped onion in water for 30 minutes or more, or add less.
Can you use canned pineapple instead of fresh? Hate to buy a whole pineapple for just !/2 cup.

Hello, I had some trouble with this recipe but it might have been because of some of the substitutions I made. I decided to just use vanilla flavored Greek yogurt and then skip the sugar because it was already sweet enough. The result was that the salad came out tasting really bitter and the bitterness increased with time. I can’t think of what would have caused this except for the substitutions I made. What do you think went wrong? Thanks
My guess is the same thing you said, the substitutions. It is a really good salad as written.

No, I used the broccoli raw. Just chop it and toss it in.
I make broccoli salad and put cauliflower in it. Have you tried adding that too?

Greek yogurt and sour cream taste almost exactly the same. I have started using greek yogurt instead of sour cream in just about everything. Greek yogurt has about 20 grams of protein in a cup and no fat or added sugars. It makes things smooth and creamy. I love it.
