What does Bubble Up mean? Bubble up refers to casseroles made with refrigerated biscuits. They bubble up when they are baked. I’ve made several bubble up casseroles for the blog – pizza, white pizza, and even an enchilada bubble up casserole. They are all fantastic. I was looking for a new breakfast casserole last weekend and decided to make a bubble up breakfast casserole. It turned out AMAZING! I am so excited to share this recipe with you!
How to Make Bubble Up Breakfast Casserole
This biscuit breakfast casserole is very easy to make. Start with cutting up a can refrigerated biscuits. Place them in the bottom of a baking dish. Top the biscuits with cooked sausage and cheese. Whisk together milk and eggs. Pour over the sausage and biscuits and bake. SO easy.
- I used Jimmy Dean Hot Sausage.
- Feel free to substitute turkey sausage for a lower calorie option.
- I used the smaller 10-count (12-oz) can of biscuits. I did NOT use the bigger Grands! biscuits.
- Can Bubble Up Breakfast Casserole be made in advance? Yes! You can assemble the casserole and refrigerate overnight.
- If I am making this for a weekday breakfast, I will cook the sausage and whisk up the eggs the night before. I store everything in the fridge overnight. I chop the biscuits and assemble the casserole first thing in the morning and bake it. It works out great.
- Can I freeze Bubble Up Breakfast Casserole? Yes! You can freeze the baked casserole and reheat later. To reheat the casserole, thaw completely. Cover with aluminum foil and bake at 350ºF for 30 to 45 minutes.
- I used shredded Velveeta cheese. I buy it at Walmart. You can also use a block of Velveeta and cut it into small squares.
- I don’t like Velveeta. What can I use instead? You can use any cheeses that you prefer in this casserole.

Bubble Up Biscuit Breakfast Casserole
Ingredients:
- 1 lb breakfast sausage, cooked and crumbled
- 1 (12-oz) can refrigerated biscuits, 10-count
- 6 eggs
- 1¼ cup milk
- 1 (8-oz) package Velveeta, cubed
- 1 cup shredded mozzarella
- ¼ tsp garlic powder, optional
- salt & pepper, to taste
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
- Quarter biscuits and place in pan. Top with cooked sausage, Velveeta and mozzarella. Whisk together eggs, milk, garlic powder, salt and pepper. Pour over cheese and biscuits.
- Bake 30-45 minutes, until golden brown. Allow to cool for 5-10 minutes before serving.
Notes:
- This recipe uses the SMALLER refrigerated biscuits. I used Pillsbury biscuits. Look for 12-oz cans that have 10 biscuits. You can also use two 6-oz cans of 5-count biscuits.

What would happen I only found grands large biscuits 8 count I was gonna cut them…..
Only use 6 biscuits and cut each biscuit into 6 pieces instead of 4
This was SO good and SO easy to make. I precooked the sausage and mixed with the egg mixture on Christmas eve. Christmas day I pulled it out and grabbed what I thought was Grands biscuits and…..I had actually purchased crescent rolls! I cut up the rolls just as I would have the biscuits and it was STILL amazing!!
Didn’t have sausage so used bacon instead, we are not shakers and found the bacon to be to salty for our liking in this recipe. Was good and will try it again with sausage.
Hey there, when you cut up your biscuits for your bubbly breakfast casserole, do you flatten them out or make little balls out of them? I’m going to try this recipe this weekend but I wanted to be sure on the biscuits first…
