Delicious Buffalo Chicken Bites

These Buffalo Chicken Bites are one of my favorite tailgating foods. Little bites of buffalo chicken dip balls rolled in cornflakes and baked to crispy perfection. I really love buffalo chicken dip, so these are right up my alley. I took these to our football party last week and I didn’t have any leftovers! Everyone loved them. They have all the flavors of buffalo chicken wings without all the mess. This easy recipe is the perfect appetizer for your game day spread!

How to Make Buffalo Chicken Bites

These spicy chicken bites are very easy to make with only a few simple ingredients. In a large bowl, combine finely chopped cooked chicken, cream cheese, cheddar cheese, and hot sauce. Season with salt and black pepper, if desired. Using a small cookie scoop, form the chicken mixture into balls.

Place some flour in a shallow pan or small bowl. Whisk egg and place in another shallow pan or plate. Place crushed cornflakes in a third shallow pan or plate. Coat chicken pieces in flour mixture. Shake off excess. Dip in egg wash. Coat in cornflakes. Place in a single layer on a baking sheet. Repeat with remaining chicken balls. Lightly spray chicken with cooking spray and bake. Garnish the baked bites with fresh parsley. Serve with your favorite dipping sauce.

  • I use rotisserie chicken for the cooked chicken in this recipe.
  • I used Frank’s Red Hot Sauce or Frank’s Buffalo Sauce. You can also use your favorite brand of buffalo wing sauce or cayenne pepper sauce.
  • Can add bacon, garlic powder, paprika, and green onions to the chicken mixture.
  • You can use any cheese that you prefer in this recipe. I like sharp cheddar cheese. Mozzarella cheese is equally delicious.
  • Can substitute bread crumbs for cornflakes.
  • You can use low-fat or fat-free cream cheese for a lower-calorie dish.
  • Are Buffalo Chicken Bites spicy? There is a kick from the hot sauce. Adjust the amount of hot sauce to your personal preference.
  • Can Buffalo Chicken Bites be made in advance? Yes! You can assemble the bites and refrigerate them until ready to bake.
  • Can Buffalo Chicken Bites be frozen? Yes! Place the dipped and uncooked chicken balls onto the parchment-lined baking sheet and freeze for 15 to 20 minutes. Transfer to a freezer bag and store in the freezer until ready.
    • To bake, place the frozen chicken balls back on a baking sheet and bake at 350˚F for 25 to 30 minutes, until crispy and golden brown.
  • Can I cook Chicken Bites in the air fryer? Yes! Place the balls in the air fryer basket and cook at 325ºF until warm.
  • Serve the bites with your favorite sauce.
  • Store leftovers in an airtight container in the refrigerator.

Easy Appetizer for a Crowd

These buffalo chicken nuggets are our go-to party appetizer for football season. They have all the flavors of buffalo wings without deep-frying! As I said, we serve these with some ranch dressing, carrot sticks, and celery sticks. 

This recipe makes about three dozen appetizers. You can easily double or triple the recipe for a crowd. This is a great recipe for football parties, holiday parties, or a quick lunch and dinner. Whip up some french fries and you are set! The whole family is sure to love these spicy chicken bites!

Buffalo Chicken Bites Recipe – OMG! SO good! Buffalo chicken dip balls rolled in cornflakes and baked to crispy perfection. A great appetizer option for your game day spread. I never have any leftovers! Can make ahead of time and freeze for later! Cooked chicken, cream cheese, hot sauce, cheddar cheese, onion powder, flour, eggs, and cornflakes. Great for parties, lunch and dinner!

Ingredients:

  • 3 cups shredded cooked chicken
  • ¼ to ½ cup hot sauce, or more to your taste
  • 4- oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 tsp onion powder
  • 1 cup all-purpose flour
  • 4 large eggs, lightly beaten
  • 3 cups corn flakes cereal, crushed

Instructions:

  • Preheat oven to 350˚F. Line a large baking sheet with parchment paper.
  • In a large bowl, mix the chicken, cream cheese and hot sauce until combined. Stir in the cheddar cheese and onion powder.
  • Using a small cookie scoop, spoon out the chicken mixture and roll into about 1½ inch balls. Place on a plate or separate baking sheet until ready to dip.
  • In three separate bowls, set out the flour, eggs, and crushed corn flakes. Dip each chicken ball first into the flour, then the egg, and ending with the corn flakes. Place on the prepared baking sheet.
  • Bake for 20 to 25 minutes. Serve warm with ranch or blue cheese dressing.

  1. Do these have to be kept warm or can they be eaten a room temperature? Same question on the Taco Ranch Bites. I’m considering taking them to an outside event but am not sure how to keep either warm.

      1. Is there a way to keep them warm without them getting soggy or dry? I made them tonight for a tail gate throw down at work tomorrow. I haven’t baked them yet. I have to take them with me to work when i get there at 630 am but the competition isn’t until 12pm. Not sure what to do!

Fixed for Super Bowl and yes, it takes time and yes, my fingers were a bit sticky, but hey…… were they worth it? I think so! I admit the Mac-n-Cheese was a failure – the cheese didn't really stick to the macaroni.
