These Buffalo Chicken Nachos were inspired by one of my favorite Auburn restaurants, Momma Goldberg’s. Momma G’s nachos are very unique. They make their nachos with Doritos, jalapeño jack cheese slices, and jalapeños. I decided to kick up their version with some buffalo chicken. O-M-G! Delicious! I love Doritos and buffalo chicken, so these are right up my alley. These nachos are super simple to make and fly off the tray! They are perfect for parties, tailgating, and an easy dinner.
How to Make Buffalo Chicken Nachos with Doritos
These nachos are super simple to make. Start with tossing some cooked chicken in buffalo wing sauce. Sauté the chicken in a skillet for a few minutes and set aside. Spread half of the Doritos on a large rimmed baking sheet. Top with half of the buffalo chicken, half of the pepper jack cheese, and jalapeños. Repeat the layers. Place the baking sheet in the oven and bake until the cheese has melted. Garnish the nachos with some ranch dressing if desired.

- Layer some chips, chicken, cheese, and jalapenos in the bamboo steamer and steam a minute or two until the chese has melted.
- If you want to steam the nachos at home, here is what you will need:
- I used Frank’s Buffalo Wing Sauce.
- I like to quickly cook the chicken in a skillet after it is tossed in the buffalo sauce. This helps the sauce to get absorbed into the chicken and keep the nachos from getting soggy. You can skip that step if you prefer.
- I use pepper jack cheese because that is what the original recipe uses. Feel free to use any cheese that you enjoy.
- You can use fresh or pickled jalapeños on the nachos.

Nachos are Great for a Crowd
These nachos are very easy to make and are great for a party. They go quick; be prepared to make lots! I like to make an assembly line so a new batch is always ready to go. I assemble the nachos on foil and then pop them in the oven as I need them. Add these nachos to your next party! I promise they will be a hit!

Buffalo Chicken Nachos
Equipment:
Ingredients:
- 1 (14.5-oz) bag Nacho Cheese Doritos
- 2 cups shredded pepper jack chees
- 2½ cups chopped cooked chicken
- ½ cup buffalo wing sauce
- 4 jalapeños, sliced
Instructions:
- Preheat oven to 400ºF. Line a rimmed baking sheet with aluminum foil.
- Toss cooked chicken with wing sauce. Place chicken in a non-stick skillet and cook for 3 or 4 minutes. Set aside.
- Place half of the Doritos in a single layer on baking sheet. Top with half of the cheese, half of the chicken, and half of the sliced jalapeños. Repeat layers.
- Bake for 10 minutes, or until the cheese has melted.

i made these for dinner this past Wednesday night except i used the whole grain tostito chips, and i used the recipe for daytona chicken instead of straight wing sauce. my husband and i ate the entire pan. it was delicious!
