Homemade Waffle Recipe
These Cheddar Cornbread Waffles are a favorite at our house. They are a delicious twist on traditionally sweet waffles. Flour, cornmeal, baking soda, baking powder, salt, cheddar cheese, eggs, buttermilk, and club soda. The waffles are light and fluffy on the inside and crispy on the outside.
This is our go-to recipe for cornbread when we make chili. Let the chili cook in the crockpot all day, and whip up a batch of these waffles when you get home from work. Dinner will be on the table in less than 30 minutes. These waffles are delicious and fun to eat!
Our Favorite Chili Recipe
Our go-to chili recipe is this Slow Cooker All Day Beef Chili – super simple to make and tastes great! Ground beef, salt, pepper, chili powder, chili beans, diced tomatoes, onion, and garlic. Dump everything in the crockpot and let it cook all day. Serve with some homemade cornbread and you are set. This is our go-to chili recipe – SO good!
How to Make Cheddar Cornbread Waffles
These waffles are very easy to make with only a few simple ingredients. In a medium bowl, stir together all-purpose flour, yellow cornmeal, baking powder, baking soda, salt, and shredded cheddar cheese. In another bowl, whisk together eggs, buttermilk, and club soda. Pour the wet ingredients into the dry ingredient and gently stir just until combined.
Spray waffle iron with nonstick cooking spray and preheat according to the manufacturer’s directions. Spoon batter onto the preheated waffle iron and cook until crispy. Repeat with the remaining batter.
- To keep the waffles warm while making the whole batch, Transfer the waffles to a baking sheet, and keep them warm in the oven at 200° until ready to serve. You can also tent them with some aluminum foil.
- Can Cheddar Cornbread Waffles be frozen? Yes! Waffles can be frozen in zip-top freezer bags and reheated in the oven or toaster oven.
- I use cheddar cheese in these waffles, but you can use any cheese that you prefer.
- Feel free to stir in some fresh herbs, chopped green onions, chopped jalapeños, or chives into the batter.
- To make homemade buttermilk, combine 1 cup of milk with 1 Tbsp of white vinegar or lemon juice. Let stand for 5 minutes or until the milk starts to curdle.
What to Serve with Savory Waffles
These cheddar waffles are great for breakfast, lunch, and dinner. Slather them with melted butter and maple syrup for breakfast. For lunch, whip up a BLT sandwich with bacon, lettuce, tomatoes, and mayonnaise. For dinner, we LOVE to serve these waffles with our favorite chili recipe. Top the waffles with chili, diced tomatoes, sour cream, cheese, cilantro, and jalapeños. O-M-YUM!

Cheddar Cornbread Waffles
Equipment:
Ingredients:
- 1 cup all-purpose flour

- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups shredded sharp Cheddar cheese
- 3 large eggs

- ⅓ cup canola oil

Man I wish i had thought of the waffle iron when I had pinto beans and ham the other week!! this would have worked wonderful! I like to have some corn bread crumbled up into my beans, but my oven is broken so I couldn't make them, I'll know for next time!
Made these today. The ended up being one of the lightest waffles we have made at home. The only ones that beat these require egg whites folded in. I believe its the baking soda and baking powder combined with the club soda that makes them real fluffy. I extra carbonated our water since we have a carbonator. I see no reason why you couldn't use still water but I think the texture would be more dense.
Just wondering…what does the club soda do to the batter?
