Quick Mexican Corn Dip
This Cheesy Corn Salsa Dip is one of our favorite dip recipes. We had this at a tailgate probably 10 or 11 years ago. I never could track down the recipe, so I finally recreated it myself. I’ve been making it ever since. It is super easy to make and tastes SOOOO good. When I take this to parties I usually double the recipe and never come home with leftovers. Everyone always asks for the recipe. It is always a hit. We love this for football parties, dinner parties, or on top of tacos! YUM!
How to Make Corn Salsa With Italian Dressing
This Cheesy Corn Salsa is super easy to make. It only has 4 ingredients and takes about a minute to whip together. Corn, diced tomatoes and green chiles, Italian dressing, and cheese.
- Feel free to customize this to your own tastes. I think this would also be good with some black beans, black olives, fresh chopped onion and green pepper mixed in.
- I used a can of white shoepeg corn. You can use a can of regular yellow corn if you prefer.
- Can use any cheese you prefer in this dip. Sometimes I kick it up with some pepper jack cheese.
- I used a can of regular Rotel diced tomatoes and green chiles. If you are worried about the heat in this dish, make sure to use a can of mild Rotel diced tomatoes. If you like it spicier, grab a can of HOT Rotel tomatoes.
- Can Cheesy Corn Salsa be made in advance? Yes! I always make this the day before we want to serve it and let it marinate overnight in the refrigerator.Ā This is one of those dips that gets better the longer it sits.Ā
- Use a gluten-free Italian dressing for a gluten-free dip.
- Serve the dip with your favorite chips; we prefer tortilla chips or Fritos Scoops.

Ingredients:
- 1 (11 to 15-oz) can corn, drained
- 1 (10-oz) can diced tomatoes and green chiles, drained
- 1 cup Italian dressing
- 2 cups finely shredded Mexican cheese blend
Instructions:
