This Chive & Onion Potato Casserole is a new favorite at our house. I made this for a family dinner last month and everyone raved about it. It is super easy to make and is bursting with great flavor! Shredded hash brown potatoes loaded with cream cheese, melted butter, and colby-jack cheese and topped with Ritz crackers. SO good! I could honestly make a meal out of just these potatoes. Add this easy recipe to your menu. It is sure to be a hit!

How to Make Hash Brown Potato Casserole

This side dish is effortless to make with only a few simple ingredients. Place evaporated milk, sour cream, chive & onion cream cheese, chicken bouillon, salt, black pepper, garlic powder, and onion powder in a blender. Blend until smooth.

In a large bowl, stir together the milk mixture, frozen hashbrowns, melted butter, and shredded cheese. Spread potato mixture into a 9×13-inch baking dish that has been sprayed with non-stick cooking spray.

In a small bowl, combine crushed Ritz crackers and melted butter. Sprinkle cracker crumbs over the top of the casserole. Bake in a preheated oven until bubbly. Garnish with parsley.

  • 1 (12-oz) can evaporated milk
  • 1 cup sour cream
  • 1 (8-oz) container chive and onion cream cheese
  • 1 cube chicken bouillon
  • salt & black pepper to taste
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • 1 (30-oz) bag frozen hash browns
  • ½ cup unsalted butter, melted
  • 2 cups shredded colby-jack cheese
  • 1 sleeve Ritz crackers, crushed
  • ¼ cup unsalted butter, melted

Instructions:

  • Preheat oven to 350ºF. Spray a 9×13-inch baking dish with cooking spray.
