These Cheesy Pesto Puffs are SO easy to make and they taste FANTASTIC! Chicken Legs took one bite and said “Hey, these are really good. What are they?” I told him and he went back for two more! LOL! They are really good and highly addictive. Serve them with your meal or with some warm spaghetti sauce as an appetizer at your next party.

How to Make Cheesy Pesto Puffs

This recipe was inspired by an appetizer I ate a zillion years ago. I’ve been in love with the flavor combination since my first bite. My version of the appetizer is super simple and tastes great! I actually made these two days in a row! There are only 4 ingredients and they are ready to eat in about 15 minutes. 

Cut some thawed puff pastry into squares. Spread some pesto on top of each square. Place half of a cheese stick on the diagonal and fold two opposite corners of each square over the cheese stick and press edges to seal. Place on a baking sheet. Brush each pastry with egg wash and bake.

These Cheesy Pesto Puffs are great as an appetizer or as a side dish for your main meal. They would also be great with some pasta! You can assemble these ahead of time and freeze unbaked for later. Equipment:

Ingredients:

  • 1 (17.3-oz) package puff pastry sheets, thawed
  • 6 Tbsp prepared pesto
  • 9 sharp cheddar cheese sticks, cut in half
  • 1 egg beaten
  • 1 Tbsp water

Instructions:

  • Heat the oven to 375°F. Line two baking sheet with parchment paper.
  • Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Cut each sheet into 9 squares.
  • Spread 1 tsp of pesto on top of each square. Place half of a cheese stick on the diagonal.
  • Fold two opposite corners of each square over the cheese stick and press edges to seal. Place on prepared baking sheet.
  • Combine egg and water. Brush each pastry with egg wash.
  • Bake 15-18 minutes, until golden brown. Serve warm or at room temperature.
