Cheesy Taco Muffins – perfect game day food. So easy to make and they taste fantastic. Ground beef, taco seasoning, diced tomatoes and green chiles, Bisquick, cheese soup, cheddar cheese, and buttermilk. Bake in mini muffin pans. Looking for an easy game day appetizer? These Cheesy Taco Muffins are perfect for watching all the college bowl games and NFL games this weekend. They are super easy to make and taste great. This is a delicious alternative to our usual sausage balls. They are easy to transport to the parking lot and parties. They taste great hot out of the oven or at room temperature. Dip them in some salsa, ranch or a combination of both. Let the party begin!
How to Make Taco Cheese Muffins with Cheddar Cheese Soup
These taco bites are super easy to make. Start by cooking the ground beef or turkey. Drain the fat. Add a packet of taco seasoning and a can of diced tomatoes and green chiles. Allow the taco meat to cool slightly. Add a can of Fiesta Nacho Cheese Soup, Bisquick, cheddar cheese, and buttermilk. Scoop the batter into mini muffin pans and bake.
- Can use ground beef or ground turkey.
- I find the Fiesta Nacho Cheese Soup at Target.
- If you can’t find Fiesta Nacho Cheese Soup, you can substitute Cheddar Cheese Soup.
- Buttermilk substitute – 1 Tbsp vinegar or lemon juice plus enough milk to make one cup. Let sit 5 minutes before using.
- You can use mild, regular, or hot Rotel diced tomatoes & green chiles.

- Can use any cheese you prefer in place of cheddar cheese.
- Can make regular sized muffins. You will need to increase the baking time.

We loved these muffins. They are great dipped in some Homemade Ranch Dressing and/or Homemade Salsa. I took these taco bites to a party over the holidays and they were gone in a flash. Cheesy Taco Muffins
Ingredients:
- 1 lb ground beef
- 1 (1-oz) package taco seasoning
- ¼ cup water
- 1 (10-oz) can diced tomatoes and green chiles, undrained
- 3 cups Bisquick
- 1 (10.5-oz) can condensed Fiesta Nacho Cheese Soup
- 2 cups shredded cheddar cheese
- ¾ cup buttermilk
Instructions:
- Preheat oven to 375ºF. Lightly spray mini muffin pans with cooking spray.
- Cook ground beef in a skillet over medium heat until no longer pink. Drain fat. Add taco seasoning, water, and diced tomatoes and green chiles. Simmer for 5 minutes. Cool slightly.
- Combine taco meat, baking mix, and shredded cheese in a large bowl. Make a well in the center of the mixture. Stir together the soup and buttermilk; add to taco meat mixture, stirring just until dry ingredients are moistened.
- Scoop batter into mini muffin pans.
- Bake for 15 to 18 minutes or until lightly browned.

Very good, I made full size muffins and ended with just over 2 dozen. I used homemade taco seasoning and homemade “bisquick” because I was out of store bought. Will make again. Also I used a variety of cheeses I had on hand a shredded them.
Delicious, will make again for sure. Baked in regular sized silicone muffin pan for 50 minutes
