How to Make Chicken Cordon Bleu Rice-a-Roni Casserole

This casserole is super easy to make with only a few simple ingredients. Cook a box of Rice-a-Roni according to the package directions. Melt butter in a large skillet over medium heat. Add pasta and vermicelli mix to the skillet and cook until golden brown. Add water and seasoning packet. Bring contents to a near boil. Reduce heat and simmer until the liquid is absorbed and the rice is tender.

While the rice-a-roni cooks, combine sour cream and cream of chicken soup in a large bowl. Stir in shredded cheese, garlic powder, honey mustard, diced ham, and chopped chicken. Stir the cooked rice and pasta mix into the soup mixture. Season with salt and black pepper, if desired. Spread the rice mixture into a 9×13-inch baking dish spryed with nonstick cooking spray. In a small bowl, combine melted butter and crushed Ritz crackers. Sprinkle cracker crumbs over the top of the casserole. Place pan in a preheated oven and bake.

The leftovers were just as good, if not better reheated! We usually serve this with some asparaguscarrots, or broccoli. This is also great with a salad and crusty bread.
