This Chicken & Corn Chowder is comfort food at its best! It is the perfect way to warm up in this chilly weather. Creamy cheesy chicken and corn soup with a little kick. The best part about this soup is that it is ready in about 30 minutes! WOO HOO!!
We ate this Chicken & Corn Chowder for lunch and dinner the same day. We still had a lot of leftover soup, so I boxed it up and shared it with a friend. She LOVED it.
How to Make Chicken & Corn Chowder
This soup is very easy to make. Start with chopping up a rotisserie chicken. Add the chicken meat to a Dutch oven. Stir in onion, garlic, cumin, salt, pepper, chicken bouillon, water, half-and-half, creamed corn, corn kernels, green chiles, and pepper jack cheese. Bring the soup to a boil and simmer for about 20 minutes.
- I used a rotisserie chicken in this soup. Feel free to use 4 or 5 cups of any cooked chicken.
- There is a can of chopped green chiles in this soup. It gives the soup a nice flavor and not any real heat.
- I also used shredded Pepper Jack Cheese in the soup. Feel free to swap that out for plain Monterey Jack cheese if you don’t want the extra peppers.
- Can Chicken & Corn Chowder be made in the slow cooker? Yes! You can make the soup in the crockpot. Dump everything in the slow cooker, cover, and cook on LOW for about 4 to 6 hours.
- Feel free to add potatoes or bacon to the soup.
- Is Chicken & Corn Chowder gluten-free? Yes! All of the ingredients in the soup are gluten-free. Make sure to buy a gluten-free chicken bouillon.
What to Serve with Chicken & Corn Soup
As I said, we all LOVED this soup. It is on the menu again for this weekend. We topped the soup with some sour cream, jalapeños and more cheese. It would also be good with some Fritos. All you need is some cornbread and you are set!!

Equipment:
Ingredients:
- 1 rotisserie chicken
- 2 Tbsp onion flakes
- 1 tsp garlic powder
- ½ tsp cumin
- salt & pepper to taste
- 1 Tbsp chicken base or bouillon
- 1½ cups water
- 3 cups half-and half
- 1 (15-oz) can creamed corn
- ½ cup frozen corn kernels
- 1 (4-oz) can green chiles
- 2 cups shredded pepper jack cheese
Instructions:
- Remove skin from chicken and discard. Remove meat from chicken and chop. Discard bones.
- Place chopped chicken in a Dutch oven. Add remaining ingredients and stir.
- Bring to a boil over medium-high heat. Reduce heat and simmer for 20 minutes.

Can you make this in crockpot & how many hours
Sure! I haven't made this in the slow cooker so I can say exactly how long. Just until it is hot – at least 3 or 4 hours on low?
what about using chicken broth/stock instead of water and chicken boullion?
You can certainly do that. The chicken flavor won’t be as strong as the combination above is about twice as strong as regular broth.
Is there a way to make this reduced fat?
Maybe try milk instead of the half-and-half. If it doesn't thicken up, add try adding some flour.
How much chicken? I have chicken breasts not rotisserie.
