Taco Chicken Skillet Rice

This Chicken Enchilada Skillet Rice is super easy to make and tastes great! Shredded chicken, black beans, corn, Rotel, enchilada sauce, and rice. SO simple and packed full of great Mexican flavor! All you need is some tortilla chips and salsa and you are ready for a fiesta! We ate this for dinner and reheated the leftovers for lunch. Add this easy one-pan meal to your menu the next time you need the whole family will enjoy!

How to Make Chicken Enchilada Skillet Rice

This recipe is effortless to make with only a few simple ingredients. Cook a package of Knorr Mexican Rice according to the package directions. While the rice cooks,  heat enchilada sauce, corn, black beans, Rotel diced tomatoes and green chiles, and shredded chicken over medium-high heat until bubbly. Stir in cooked rice. Simmer over medium heat for 5 minutes, until heated through. Sprinkle fresh cilantro over the top of the rice and enjoy.

  • You can use any cooked shredded chicken in this dish. I use rotisserie chicken. 
    • Chicken breasts, chicken thighs, chicken tenderloins, or canned chicken all work great.

We top our rice with iceberg lettuce, sour cream, guacamole, olives, lime wedges, and shredded cheddar cheese. Add a drizzle of our Jalapeno Ranch to really put this over the top! Easy Chicken Enchilada Skillet Recipe – quick and easy weeknight meal! Shredded chicken, enchilada sauce, Rotel, black beans, corn, and rice. Ready to eat in under 30 minutes! Ingredients:

  • 1 (5.4-oz) package Knorr Mexican Rice
  • 2 cups cooked chopped chicken
  • 1 (10-oz) can enchilada sauce
  • 1 cup black beans
  • 1 cup corn kernels
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained

Instructions:

  • Prepare rice according to the package directions.
  • In a large skillet, combine chicken, enchilada sauce, black beans, corn kernels, and Rotel. Bring to a boil over medium-high heat. Reduce heat to medium-low.
  • Stir in cooked rice and cook for 5 minutes.
