These Chicken Enchilada Pinwheelsare AH-MAZ-ING! I have made tortilla sandwiches these several times over the past few months and they are always a hit. Cream cheese, chicken, taco seasoning, cheese, salsa, corn and black beans wrapped in a tortilla. I mean, what’s not to like?!?! They are great for lunch, dinner, tailgating, and parties.
How to Make the Best Chicken Enchilada Pinwheels
These pinwheel sandwiches are very easy to make. Combine softened cream cheese, taco seasoning, salsa, corn, black beans, cooked chicken, and cheddar cheese. Spread the mixture onto tortillas and them roll up. Pop the tortillas in the refrigerator for about 30 minutes and then slice.
- It is important to refrigerate the tortillas about 30 minutes before slicing. The cream cheese needs time to firm up.
- My favorite store-bought salsas are Maeto’s, Kylito’s and Trader Joe’s salsa.

- You can use any size tortillas that you prefer. I use burrito sized tortillas, but any size will work fine.
What to Serve with Tortilla Sandwiches
We like to dip these sandwiches in some salsa or ranch. They are really good dipped in our favorite Jalapeño Ranch Dip. YUM! If you are making these for lunch or dinner, whip up a salad or some coleslaw. I really like to make these for parties and tailgating. I am making a batch this weekend with some red and green tortillas. PERFECT for Christmas parties!

Chicken Chicken Pinwheels
Ingredients:
- 1 (8-oz) package cream cheese, softened
- 1½ cups chopped cooked chicken
- 1½ cups shredded cheddar cheese
- 1 Tbsp taco seasoning
- 6 Tbsp salsa
- ¾ cup corn kernels
- ¾ cup black beans, drained and rinses
- 4 or 5 large burrito tortillas (10-inch)
Instructions:
- Mix softened cream cheese with the chicken, shredded cheese, taco seasoning, salsa, corn, and black beans.
- Spread about ¼ to ⅓ cup of the chicken mixture evenly on each tortilla.
- Roll the tortilla up gently, yet tightly to make sure it holds together and keeps its shape.
- Refrigerate for about 30 minutes to firm up the softened cheese. Cut off ends of tortilla roll and cut into 1-inch slices.

Question: Could we freeze these ahead??
I’ve never frozen these, but I am sure that you could. I would probably freeze them uncut and thaw and slice when ready to serve. Make sure to wrap them tightly with plastic wrap.
