I am totally addicted to this Chicken Fajita Alfredo! It only takes about 15 minutes from start to finish, and it is even gluten-free!! We ate this last weekend, and I am adding it to the menu for this week too. It is seriously that good.

This Chicken Fajita Alfredo has all the flavors of fajitas. It tasted just like the fajitas I order at my favorite Mexican restaurant. I LOVED the addition of pasta and a ridiculously simple alfredo sauce. Pasta + Fajitas = YUM! The whole recipe only has 7 ingredients – chicken, onion, bell pepper, fajita seasoning, heavy cream, Parmesan cheese and pasta. Can’t beat that!

I cooked the chicken, vegetables and sauce while the pasta cooked. Once the pasta was done cooking, everything was ready to be tossed together. I loved that I didn’t have to do any prep work and dinner was ready in 15 minutes. Perfect weeknight meal!

For the pasta, I used Ronzoni Gluten Free® Penne Rigate. It tasted just like regular white pasta. No one would ever know it was gluten free. The pasta is made with brown rice, white rice, corn and quinoa. It is that unique multigrain blend that gives it that white pasta taste. You also get 19 grams of whole grains in every serving!
You prepare Ronzoni Gluten Free® pasta pretty much the same way you prepare regular pasta. Gluten free pasta is a little more sensitive than regular pasta, so make sure to follow the directions for recommended water amounts and be sure to rinse the pasta in warm water.

Chicken Fajita Alfredo

ingredients:

  • 8-oz Ronzoni Gluten Free® Penne Rigate (or regular pasta)
  • 1 lb chicken tenderloins
  • 1 bell pepper, sliced
  • 1/2 onion, sliced
  • 1 (1.12-oz) package gluten-free fajita seasoning (or regular)
  • 1 Tbsp  vegetable or olive oil
  • 2 cups heavy cream
  • 1/2 cup grated parmesan cheese

instructions:

  1. Prepare pasta according to package directions; drain and rinse with warm water, set aside.
  2. Cut chicken into bite-sized pieces. Sprinkle chicken, pepper and onion slices with gluten-free fajita seasoning.
  3. Heat oil in a large skillet over medium-high heat. Add chicken, peppers and onions. Cook for 7 to 10 minutes, turning occasionally.
  4. Add cream, bring to a boil. Reduce heat; simmer gently for 3-4 minutes or until mixture begins to thicken. Remove from heat, stir in Parmesan cheese. Add pasta to sauce and toss.

  2. I love a clean out the fridge pasta dish. My last one I made was:

    1 jar marinated artichokes chopped
    2 slices of deli ham chopped
    1/2 cup roasted red peppers, chopped
    1/2 onion sliced into strips
    1 cup baby spinach
    1 cup egg noodles cooked
    1/2 cup marinara sauce

    Add oil to a skillet. Cook the onions for 5 minutes, add the rest of the ingredients and saute until spinach is wilted. Cook noodles according to package directions, drain and toss with sauce. Add the sauteed veggies and ham and combine. Garnish with parm.

    Penne
    jar of alfredo sauce
    jar of spaghetti sauce
    1 lb ground beef
    mozz cheese

    Cook the pasta, toss with alfredo. Layer on the bottom of a casserole dish.

    Cook the beef, toss with spaghetti sauce. Pour over the pasta.

    Top with cheese.

    Bake 350, 30 mins.

    I like penne for this, but you could use any.
    It is a requirement that you have pasta and Italian dressing. Everything else is up to you. My fave italian dressing is Good Seasons (the kind you mix yourself). Then, we add any combination of black olives, salami, pepperoni, mozzarella, feta, chicken, sun dried tomatoes, garbanzo beans, roasted red peppers.
    Easy and delicious.

    1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
    2 eggs
    1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
    1/4 cup KRAFT Grated Parmesan Cheese. Mix and bake at 350 for 30 min. Delish!

  7. My quick easy and delicious pasta meal is pasta salad. You can pretty much use whatever your fav pasta is but I use either elbow, rotini or bowtie. After the pasta is cooked I rinse it in cold water. I mix in mayo, cheddar and/or parmesan cheese, fresh chopped tomatoes, green peas, sometimes chicken, sometimes tuna….you can put whatever you like. It's quick, filling and oh so yummy!!….I should also add that it is perfect on these hot days of Summer lol.
