This is a great way to use up leftover chicken. I used some rotisserie chicken and tossed it with some Greek seasoning, but this would be really good with some of the Oregano & Lemon Chicken Tenders that I posted earlier this week.
I love to make flatbread pizzas for lunch or a quick weeknight dinner. I always use Toufayan Flatbread – I find them in the deli/bakery section at Publix. They taste great and make the perfect base for all the mini pizzas we make. This flatbread only took a few minutes to put together and tasted great. I loved the combination of chicken and feta, it was a nice change from the usual mozzarella.
Chicken Marinara Flatbread
serves 3

- 1 cup cooked chicken, chopped
- 2 tsp Greek seasoning
- 1 tsp olive oil
- ½ – ¾ cup marinara sauce
- 1 cup Feta cheese
- 3 flatbread
Heat olive oil in a skillet over medium heat. Saute chicken and Greek seasoning for approximately 3 minutes. Set aside.
Top flatbread with marinara, chicken and feta. Bake at 375 for 10 -15 minutes, or until flatbread is golden brown and cheese is warm.
