Copycat Chick-fil-a Chicken Minis

This Chicken Mini Breakfast Casserole was inspired by my favorite breakfast food – Chicken Minis from Chick-fil-a. Like a lot of people, I have a serious weakness for Chick-fil-a. I love almost every menu item. I am not usually a breakfast person, but I never EVER turn down a box of chicken minis. OMG! YUM! I was craving some chicken minis and had a eureka moment! Why not make a chicken mini breakfast casserole at home?!?!? Brilliant!

We both LOVED this casserole. SO yummy! I think my favorite part of the whole casserole was the honey brushed on top of the baked casserole. You have to have that hint of sweetness so they are like Chick-fil-a’s Chicken Minis!!

How to Make Chicken Mini Breakfast Casserole

This casserole is super easy to make. Start with cutting crescent roll triangles lengthwise into 3 narrow triangles. Place one piece of popcorn chicken on the wide side of each triangle. Roll up and place in baking dish. Top the crescent rolls with shredded cheese. Whisk together eggs, milk, salt, and pepper. Pour over crescent rolls and bake. Remove from oven and immediately brush the top of casserole with warm honey.

  • I used frozen popcorn chicken in this casserole. I like Tyson’s Anytizers brand.
  • There is no need to thaw or bake the chicken before wrapping it in the crescent rolls. The chicken will cook along with the rest of the casserole.
  • I used cheddar cheese in this recipe. Feel free to use any cheese that you prefer. Don’t want cheese? You can omit it.
  • You can assemble the casserole ahead of time and refrigerate overnight.
  • Can Chicken Mini Breakfast Casserole be frozen? Sure! I usually freeze this casserole after baking and reheat it when ready to eat.

Chicken Mini Breakfast Casserole – inspired by our love of Chick-Fil-A’s chicken minis. Frozen popcorn chicken, crescent rolls, eggs, milk, cheddar cheese and honey. We made this twice in one week. Ingredients:

  • 1 (8-count) tube refrigerated crescent rolls
  • 1 (4-count) tube refrigerated crescent rolls
  • 36 pieces frozen popcorn chicken
  • 5 eggs
  • cups milk
  • 2 cups shredded cheddar cheese
  • salt and pepper
  • ¼ cup honey, warmed

Instructions:

  • Preheat oven to 375ºF. Lightly spray a 9×13-inch baking pan with cooking spray.
  • Unroll both cans of crescent rolls; separate into 12 triangles. Cut each triangle lengthwise into 3 narrow triangles.
  • Place one piece of popcorn chicken on wide side of each triangle. Roll up and place in prepared pan.
  • Top chicken minis with shredded cheese.
  • Whisk together eggs, milk, salt and pepper. Pour over chicken minis.
  • Bake for 30 to 40 minutes, until egg mixture is set.
  • Remove from oven and immediately brush top of casserole with warm honey.

  2. Would love to try, but I don’t know what frozen chicken minis are. Can you be more specific or offer a substitute if I don’t have that product in my area?

  3. OK made this to take to work at my veterinary clinic this morning, 6 people and not a scrap left, hands down approval from South Carolina. I assembled the nuggets and Crescent rolls the night before, put seal & press over the top of it to keep it from drying out. In the morning, took out of fridge to warm up, mixed up the eggs and milk poured (used a cup of cream, the rest milk) over the top and baked. Impressed!!

  4. I made this for a Bible study brunch and it was delicious! Can't wait for my family to try it! I will say that my popcorn chicken was really big and I had to cut some of them in half to fit in the dough. It all worked out just fine but I'm wondering if I bought the wrong kind of popcorn chicken. Will definitely make again!

    1. I have not tried doing that so I can't say with certainty. It seems like it would work fine. If you try it, let us know how it turns out.
